A: Pours a clear medium yellow in color with light amounts of active visible carbonation and some honey + apricot highlights. The beer has a finger tall sudsy foamy white head that slowly reduces to a large patch of thin film covering the majority of the surface of the beer with a couple of small slightly thicker patches and a medium thick ring at the edges of the glass. Moderate to significant amounts of lacing are observed.
S: Moderate to strong aromas of funky earthy brett with notes of hay and barnyard. Lighter aromas of citrus - lemon zest, orange rind, and lime zest.
T: Upfront there is a light flavor of pale and grainy malts with no sweetness. That is quickly followed by strong flavors of brett - earthy, spicy, and funky with lots of hay + grass. There is a light flavor of citrus - lime zest, lemon zest, and orange rind. Hints of spicy + herbal hops in the finish which contributes a light amount of bitterness in the finish.
M: Medium bodied with moderate amounts of carbonation. Light amounts of chalkiness towards the finish.
O: I have never tried Kabosu fruit but after trying this beer I am definitely interested. Brett is very present but not overly funky. Very enjoyable and easy to drink.

Spicy taste, like pumpkin spice. I had a very warm overall feeling after drinking it. It was quite foamy when poured. A good typical pale ale - cloudy/dirty but delightful. Paid $2.99 for the 22 ounce bottle, averaging $.14 cents per ounce; thus, the price was competitive with other brands. I do recommend it but feel that there are others that are more flavorful for less.

It's pretty good, though I can't say that I can pick up anything special about the Kabosu. Seems like a good hoppy, Brett, lemon citrusy beer to me.;

22oz bottle, another Brett-infected 'IPA', with another exotic Japanese citrus fruit. Yippee.
This beer pours a hazy, yet bright medium golden yellow colour, with three fat-ass fingers of puffy, loosely foamy, and mostly bubbly and fizzy bone-white head, which leaves some low-lying tacky limestone cliff lace around the glass as it gently recedes.
It smells of sharply tart and funky white European cheese (French, Italian, who fucking cares), musty and dank forlorn farmhouse corners, grainy, lightly crackery pale malt, further generic yeasty notes, tanned leather, wet earth, and muddled green weedy, leafy, and citrusy hop bitters. The taste is still quite funky and musty, cheesy and leathery esters, mixed pale orchard fruit (apples, pears, and limes), gritty and grainy pale malt, a growing pine tip and needle acridity, a weird citrus fleshiness, and more isolated earthy yeast astringencies.
The carbonation is rather involved in its forcefully palate coating, fizzy and frothy emanations, the body just on the light side of a typical middleweight, and not particularly smooth, for reasons I don't think I have to elucidate. It finishes trending dry, with the bacteria stepping off of the gas, somewhat, and the hops starting to see that they might want to, oh, I dunno, represent?
Yeah, I don't see how this should be classified as any sort of IPA. Sure, it's hoppy, but that's not the drawing point here - that would be the funk, the wild yeast, and all that, so American Wild Ale is so much more an appropriate designation. But since the mind guild at Evil Twin (it's in their name, sheeple!) decrees it as so, so it shall be, which is a barely drinkable, gullet-gagging affair - y'know, if it's a quaffable beer you're actually after.

crazy hazy this thing is, kind of an oddity. i didnt love its counterpart, and on the whole, i dont love this one. i think its a little more acidic and sharp, more of a vinegar profile, but this is many months older than the other one was when i had it, so maybe maturity plays a role. it was neat to taste this side by side with others in the series, i think its easily the most funky and sour of them all, but i found the hops to be lacking in comparison to the rest of them. maybe it is older, but maybe the acidity here decays the hops at a quicker rate. its tough to tell. i like the fluffy feel, even though its murky and thick, a ton of sediment in mine, i mean, like milky and weird, almost unappealing, but i was aggressive with it. a little dirty sock weird funk to it, but a lot of carbonation and as dry as any of them. in the end, its not all that different, and its not all that impressive, for me, the yuzu edition remains the highlight of the experiment, although there are a few out there i have yet to encounter. i still think its fair at its market price, and i will likely look for another to see how it ages, but frankly, for an ingredient this unconventional, i wanted more of an experience out of it...
