Beautiful and rustic, the forces joined between Evil Twin and Stillwater brewers yield a deceptively strong ale with the old-world grain sweetness and spicy hop bite, yet masterfully spun into a dry, crisp and palate pleasing session.

Its bright golden austere sparkles in the glass despite a light haze. Its intertwining pearls of carbonation build a cottony lather to deliver modest floral aromas, delicate fruit and fresh-kilned grain to the nose. Its dry cracker maltiness delivers the faintest grainy-sweet support and celebrates its pilsner-like character well.

But the more Belgianesque character unfolds upon the middle. Fruit flavors of apple, lemon, mild orange and white grape jump up in front of a light sulfur whiff. But the spices grow to overtake the balance with white pepper, cumin, dry hay and a zesty wine-like tang. Its stern carbonation lightens the body further and brings out more of a grassy hop presence.

Its effortless finish comes way of the beer's lively effervescence that carries the malt off the mouth easily, ushering in a fast-fleeting and cleanly bitter finish with echoes of spice and hop bitterness lingering briefly. While floral wafts and spicy bitterness merge at times, a short soap character can be detected, but forgivably so.

Poured into a Gulden Draak tulip. Pours a clear, light straw amber with a fine one finger white head with good retention and lots of lacing. Aroma of light fruit; apple, pear, peach as well as lemon and orange citrus, saison yeast, clove. Spicy and mildly floral, quite nice. Starts with semi-sweet apple, pear and mild light stone fruit, orange and lemon citrus, then dries out to reveal clove and coriander and citrus rind flavors, finishing with citrus rind, clove and light hop bitterness. Medium bodied with light creaminess. This is my kind of a saison, complex fruit, both lightly sweet and dry components, nice citrus bitterness without strong sour flavors. The aroma is outstanding and the flavor follows with similar compexity, but more standard saison body. I liked this quite a bit.

Has a fruity, saison nose and a lemony palate with a dry bitterness on the finish. Very effervescent, light and refreshing. This is a very clean and crisp saison.

22oz bottle - Poured a slightly hazy, golden color with a nice white head that was well retained. Floral and sweet grain aroma. The taste was too hoppy for a Saison for me, but other than that came close to what I would expect from the style. Nice feel, refreshing and easy to drink. Overall a solid beer and one that I would buy again.

A: The beer is clear yellow in color and has a slight amount of visible carbonation. It poured with a quarter finger high white head that died down, leaving patches of bubbles on the surface, a collar around the edge, and some lacing down the sides of the glass.
S: Light to moderate aromas of pilsener malts and peppery yeast are present in the nose.
T: From start to finish, this beer has flavors of peppery spices along with underlying hints of pilsener malts.
M: It feels light- to medium-bodied and a little dry on the palate with a moderate amount of carbonation. There is a little bit of cleanness.
O: This beer tastes like a hybrid between a pilsener and a saison and exhibits properties of both styles.

Poured into a balloon glass.

Look: A very thick, opaque golden straw yellow colored body with a white head. The head leaves little film, but nice big sheets of lacing.

Aroma: Certain fruity esters with mostly banana coming through, slight citric bitterness like lemon, both grassy and musty on the back end.

Taste: Starts out yeasty with subtle fruity notes, more range peel than anything. Very dry and bitter in the finish. Leaves a bitter glue-like aftertaste.

Mouthfeel: Dry, medium bodied. Alcohol well hidden.

Overall: The smell had a lot going on -- everything else went downhill from there. Metallic, bitter aftertaste.

Served from tap in a tumbler at Beer Market - Vernon Hills.

So classic it's not... Anyway, this stuff pours a clear brass topped by a finger of lightly off-white foam. The nose comprises fuzzy lemon zest, light hard water, and mild greens. The taste holds notes of dark greens, dank sourdough, and light clove. The body is a light medium, with a light moderate carbonation and a crisp-ish finish. Overall, this beer just didn't do it for me. It's flavors were muddled at best, with very little real saison-ness peaking through. I dunno about this one, man...
