Just love making IPAs, so here's another one that uses a new hop blend called Zythos that is just delicious and should be enjoyed with a blow-up doll or something similar.

The beer pours an orange color with a white head. The aroma is full of pine from the hops, as well as some floral notes and some biscuit malt. The flavor is also very nice. I get a good dose of pineapple and pine, as well as some floral and perfume-like notes. There is also a hint of grass and some biscuit malt. There is a ton of hop flavor but the bitterness is low. Medium mouthfeel and medium carbonation.

Poured from a bottle into a Spiegelau IPA glass. It is a copper color with a good amount of white head. Leaves a lacing down the glass. Smell is very piney and a taste to match. Very good showing from a beer that has a not so appealing name. I am becoming a huge fan of 2nd Shift.

Poured from the tap a very lightly hazed orange color with one finger of dense off-white head.

Aroma of orange peel and pine with a hint of caramel malts.

The taste was much like the aroma. Bright citrusy orange and pine with a nice sweet caramel backbone. A light bitterness to the finish.

Medium bodied and clean with a moderate carbonation.

A very nice IPA/IIPA from 2nd Shift. Even with a name like Ratsalad, I'll definitely have again.

When many a makers of IPA turn their focus on tantalizing perfumes, juicy fruit flavors and a smooth finish, its nice to see an imperial IPA that hasn't forgot about the focus on hop bitterness.

2nd Shfit's Ratsalad does just this. However, its hasn't forgone the current trends of a bright citrus, tropical and melon fragrance. Hints of herb and grasses peak through stone fruit scents while the ale pours a deep peachy amber color and quickly crowns with a sturdy eggshell meringue. Caramel, granola and sweet nuttiness greets the early palate with a rich malt taste to buffer the tastebuds from the hop onslaught to come.

While the bulk of sweetness holds tight through the middle palate, the waves of hops come strong an swiftly. Bright orange, mango, apricot and nectarine flavors bring that stone fruit influence ahead of the more bright and tropical flavors of pineapple, passionfruit, kiwi and papaya. A follow of cantaloup, chive and fresh grassiness decorate the finish while its bitterness steadily grows into a peppery, sprucy and juniper-like spice.

Full bodied and structurally malty even late in taste, the beer seems balanced with lingers of toasted sweetness, honey and pecan, then countering with fruit, herb and spruce. But the bitterness that simply won't stop. Trending more IPA-like than imperial, the gripping bitterness in finish and a long spicy gin aftertaste saves the day.
