Our newest saison is a Collaboration with our Chef, Chris McCoy and inspired by the flavors of Southeast Asia. Brewed with coriander, lemongrass, Thai basil, kumquats and blood oranges and fermented with yeast from one of Belgium's most respected farmhouse breweries, this complex and interesting brew is great on its own and is a perfect compliment to a diverse array of foods.

Poured from draft at haymarket. Pours a medium gold color with a small head.

Very nice aromas of spices, fresh picked citrus, and some florals as well.

Good attack, but thins out with a near non-existent finish. The notes of spices, citrus and florals are very good until the thinning out.

If this didn't thin out, it would be a good bit better. A solid saison, but not all too memorable

(Served in a stemmed goblet)
A- This beer pours a golden-yellow body with a hint of haze and a thin snow white creamy head supported by a gentle carbonation of lazy bubbles.

S- The clean aroma has hints of mellow green hops with some soft farmhouse yeast esters only coming through when the beer is pretty warm.

T- The soft yeasty esters lead to a nice canned fruit hop flavor and some smooth dry green hops flavors in the finish. There is a apricot flavor to the hops that grows aswellas a bubble gum flavor in there.

M- The light mouthfeel has a gentle fizz in the finish but no alcohol heat noticed.

O- The great saison yeast character comes through in the taste and is very sessionable but the aroma is very soft.

On-tap at Haymarket. Served in a 4oz taster glass.

A - White foam settles to a partial cap, thick collar, and some splotchy lace. Transparent pale golden body.

S - Aroma is very intense, with basil and coriander dominating but not overwhelming. Don't get much kumquat, and there's some farmy Belgian yeast and bread filling things out.

T - Taste is also pretty heavy on the spices, with peppery yeast and bready malts rounding out the flavor profile. Very low sweetness.

M - Crisp, dry, medium body, with moderate carbonation. Pleasantly light and refreshingly crisp.

D - For a beer with added spices I thought this was surprisingly enjoyable. Nothing mind-blowing but I'd have this one again.
