i like how different this is. batch 1, 2013. pale in color for a red beer, more brassy than anything, with one of those real fizzy airy white heads that dissipates pretty quickly. panil is making some interesting stuff, their wild side is so much different than the now stock brett and lacto cultured beers of the united states. this is truly the weird side of fermentation, giving this brew and almost hot pepper like aroma, without the heat. very fleshy and vegetal, and the oak is intense on it. charcoal and drying minerality on the front end, sweeter amber malt and lactic sourness as it finishes. some find it a little one dimensional, and i can see that, but if you look deeper, there is a lot of nuance and delicacy here. ripe apricots, green melon, cherry candy, i can find a lot of weird fruitiness in here if i try hard enough. if i just sip back and sip it, i enjoy its simplicity and uniqueness on the yeast front, and am especially happy with its light body made prickly by effervescent carbonation. probably not worth the 16 or 17 bucks they fetch for it, but i like this quite a bit.

Binny's - Orland Park
Batch #2 - 2015
Raphael is a handsome Flander's style red ale. It's mahogany in body with a beautiful glow and a rather amazing clarity. The body's color transitions from bright to deep as the width of the flute expands. A dusty white head sits proudly a top in its fizzy, tightly bubbled style. The foam sticks around for the entire drink and leaves sticky, pasty lace in its wake.
The smell on this guy is welcomed. Softly tannic, musty oak get things moving before being met with mild funk in the form of wet stone and wildflowers before seguing into a medicinal quality...band-aids. Mild tart cherries pass abut here and there along with an estery stone fruit presence. All aspects are blended quite well. Nothing screams out but the medicinal quality could be toned down a notch.
The flavor tends to mimic the nose. Soft, musty oak wraps itself around tart cherry and stone fruit esters. There's a nice play between sweet & sour from start to finish. There's not a lot of acidity in this one. The band-aid blows off as it breathes and the medicinal quality becomes much easier to handle with some glasstime, more a supporting role than a distraction.
The feel is right where it should be, light and airy with a near prickly carbonation and a refreshing tartness on the swallow. The bubbles awaken the tongue. The tartness hits every nook & cranny and lingers around for a while. The finish is dry, leaving you reaching for the glass more often than normal.
This doesn't quite live up to what I was hoping for from the likes of Panil. The band-aid presence is a little in your face off the bat but, luckily, blows off. The flavors are good overall if a little weak in nature. This just doesn't have the pop and presence of Barriquee.

Poured from the bottle into a tulip glass. Batch #1 vintage 2013.
Rocking three finger tan white head, light and fluffy looking as a feather with excellent pinhead carbonation. Rocking clumpy retention and lacing to match as well and not going anywhere. Body color is a burnt rust orange, opaque yet glowing with a classic roaring middle column of carbonation, and some on the sides of the glass, creeping up to repopulate the head wonderfully. Aggressive, take no prisoners, near perfection and a shocking good looking brew.
Interesting mix on the nose. Bouquet hits at dry peppery almost saison like notes but with much more tartness coming forward. Big fruit aroma and dry acetic tones really come out. Sour caramel mixes in as well. An excellent bouquet mixing an almost lambic fruit sense, biere de garde, and saison nose in a wild mix. Barrel character hints at just a bit of round quality but it's the esters and malts really scrambling for the limelight in a very enjoyable way.
Seems we were heading for greatness but first palate experience brings the beer down to earth. Dry heat manages to take in with simple malt body. Chewy and malt sweetness really does take a back seat, even a hint of wet, which does not give much character of any barrel greatness. Slow mix of mild tartness and light pepper, and a hint of caramel sweetness. Quite bright mineral aftertaste with a hint of mild toffee, but with tartness taking much of the sweetness character away.
Interesting brew that went in many different angles, not sure if by design either. Still comes out a little disappointing from appearance and nose but does make a good solid tasty experience all around at least.

Orange color with a huge, billowing head. Leaves soapy lacing all over the glass.
Yeasty, floral, tropical , slightly acidic aroma.
Sweet fruity flavor of pears and apples with a mildly tart character. Yeast and fresh, grassy hop character. Well balanced.
Medium bodied. Well carbonated. Semi-dry finish.
Solid.
