750ml bottle poured into a globe.
A: Very dark brown on the pour, almost black. An easy pour still sees four solid fingers of head form atop the beer.mretention is excellent, and chunks of lacing are left in its wake.
S: Molasses and carob. Sooty and roasty notes. Some musty yeast. Mildly acidic fruity berry and prune character. Licorice. Perhaps a very faint whiff of earthy hops.
T: Nutty cocoa, carob, and molasses up front. Roasty soot and char soon take over. Cola-like impression too. Dark berries. Very mild acidic prune sort of flavor. Slight brown paper bag oxidation. Yeasty undercurrent. Faint phenols. Some alcohol. The high attenuation leaves it fairly dry. Yeasty, nutty, and mildly sooty finish.
M: Hefty medium body. Round and slightly chewy with a sense of weight, but quite airy and smooth thanks to the high attenuation. It seems to melt in your mouth. Carbonation has a fine-bubbled and gentle scrub. Great bottle conditioned feel.
O: Old school methodology here as an older stock ale was blended in to achieve the finished product. It's an easygoing and tasty quaff. Maybe a bit humble, but enjoyable.

Possibly a hint of lactic in there. The flavor is light roast and chocolate with some obvious oxidation going on. Lightly fruity earthy tones and a somewhat ashy mouthfeel. Ok brew.

Creamy, milk chocolate aroma. Mild.
This is a mild stout. There's no harsh burnt elements of espresso or dark chocolate. The taste has a bit of tartness to it. The body is a bit thin but so is the carbonation.

House yeast culture eh... could be interesting.
Pours a darker colored fizzy fluffy almost 2 finger head that afades semi slowly with lots of lacing, just about pitch black beer. 4.25
Nose is interesting, fairly standard at least, lots of biscuity dark malts, toasty brown malts, caramel syrupy aromas, toasted slight roast, mild cocoa and coffee syrup, a bit of a super dark chocolate cookie like, little cocoa and dark choc, into mild alcohol warmth, some phenols and herbal spices from the yeast, as well as some nutty aromas. 4
Taste brings more of the same, with some biscuity dark malts out front, plenty syrupy like sassafras earthy root based syrup, nutty and earthy, and fair sweetness, A little toasted biscuit, and faint roast, with some cocoa and dark chocolate, a little cocoa wafer cookie flavor. A mild spicy hop bitterness in the background as well, with plenty of almost perfumey alcohol and lots of phenols, spicy alcoholic phenols, and a bit yeasty. Finish is sticky but dries like hell, more booze, lots of phenols, spicy hops, and a little sticky syrupy brown malts lingering. 3.5
Mouth is med bod, bit syrupy, some booze and spicy phenols, nice carb, a lot more booze than it should have for a 7.5% beer 3.25
Overall meh, it started nicely, but dropped off quickly once the booze and phenols kicked in. Nice base beer, but that yeast just didn't do it nicely. I like the idea, house yeast culture, but this one didn't cut it. Mystic Saisons are great, outside that they seem so-so. But love the experimentation aspect. 3.5

No bottle date, batch 1. Couple weeks old?
A: Pours a medium brown with a very tall, very fluffy light brown head. Great head retention with a huge island of foaming hanging around. Thick walls of lacing everywhere.
S: Very light roasted malt. Light cocoa primarily. Some burnt pretzels. Slight bit of caramel sweetness.
T: Again, very light roasted malt. Some caramel and toffee sweetness and a bit of bread. A tiny bit of char and cocoa, but it gets a little stronger in the finish really, with a bit of earthiness now. Swear I get a little oak but I don't think this is barrel aged. A nice little bit of sweet caramel lingers in the aftertaste.
M: A little watery, a little too thin but not horrendous.
O: Hmph, hard to classify or score this one. It tastes like a really weak irish stout. Or an irish stout mixed with a light, malty brew. Like an english mild, maybe? Drinkability is good.

Appearance: dark brown in color, 1 inch head, clear, high carbonation
Smell: rich chocolate and roasted malt
Taste: rich chocolate--both sweet and dark, smoky wood, and roasted malt
Mouthfeel: medium-heavy bodied, medium-high carbonation, sweet and roasty
Overall: A nice rich and heavy Irish stout. Really good and unique for the style without being so different that you do not recognize it as an Irish stout. The smoke and wood shine in this beer. I see this as more of a wintery heavy treat, and will be really interested to pick up another bottle and see how it ages.

I see this as more of a wintery heavy treat, and will be really interested to pick up another bottle and see how it ages.
