2018 vintage.

Murky brown body. No head.

Vinegar, depleted maraschino, plum, dark malts. A bit saccharine.

Viscous and heavy.

A poor attempt at a Belgian quadrupel.

11/04/19: I'm ending up giving this an unexpected second chance from a 2018 vintage bottle. I hope I find it more appealing than the last time I had it on-draught...

Prune, plum, date...has a dry withered raisiny feel to it and the dark fruit notes bend more towards prune juice for elderly people instead of towards rustic Belgian monastery beers, which is to say this tastes kind of bad despite hiding its ABV decently. Overly sweet, with heavy residual sugars indicating poor attenuation (was Trappist yeast even used or did they cheat with Belgian dark ale?).

Caramel, bready malty sweetness, depleted cherry, vinous notes that aren't really pleasant, yeasty sediment/tannin...this is imbalanced and a bit of a chore to drink.

Appallingly poor fare from a brewery that might be Louisiana's best...I think they should stick to the IPA and stout game because this is a horrid try at a Belgian ale. Finishes on a stale woodsy flavour with lingering flavours of nursing home prune juice...this makes one wonder what might be next for Parish - a Milk of Magnesia Milk Stout?

Pours a dark black color with a reddish hue. Small foamy head that quickly dissipates. Very mild retention with good lacing. Aroma of dark malts, candied sugar, dark fruits, and Belgian yeasts. Taste follows the same route. Very smooth bodied. Nice sweetness at the end. Mild carbonation. Definitely a good beer.

2019 version (its different every year): in port barrels. No head at all. Very heavy, strong Belgian-style quad. Darker than most -- murky, almost black. At the start it is sweet. The finish is a little burnt and almost as much like a stout than most Belgian quads.
