Batch # 1
Appearance - Pours a pale straw with three fingers of bubbly white head.
Smell - funky brett yeast, oak, and vinous aromas, black pepper, melon, citrus, grapes, gooseberry, passionfruit, pear, peach, citrus and tropical hops, and biscuity malts.
Taste - funky brett yeast, oak and vinous aromas upfront then quickly goes into the black pepper, melon, citrus, grape, gooseberry, passionfruit. pear, and peach. The citrus and tropical hops come through alongside the biscuity malts. A really nice take on a saison.
Mouthfeel - Medium bodied with moderate to high carbonation. Finishes sticky and slightly vinous from the nelson sauvin hops.
Overall - An exemplary saison that delivers on all fronts. The brett yeast adds a pleasant complexity to complement the saison elements of this brew. A must try from this brewery and a rare find here in Cowtown!

Shimmering, lemon gold body, not quite clear; forms a sizable white head, fine, with a couple minutes retention. Sizzling.
Kiwi, sweet apple, pear, honeydew melon, white grape - crisp, sweet fruit, wonderfully fresh, like it's picked off a tree. No astringency at all.
Flavour takes a turn, with assertive pithy bitterness, like eating an orange peel whole, and alcohol burn in the finish that could you some softening. Tinny. Similar fruit flavours to the nose are found, though with a touch of tartness and little sweetness - apple peel, lemon peel, white grape. A touch of spice maybe, clove-like. Finish is very dry, with the pithiness/peach pit flavours lingering. Medium body and carbonation, fine. Crisp and smooth feel.
Solid on the nose, but the taste is hard on the palate, not pleasant. I was tasting with somebody else and they had the same reaction. Maybe I got a bad batch given the ratings.

older now, but still on shelf here in idaho, 19 bucks a bottle, easily worth it, and like a lot of hoppy brett beers, there is no sign of age, hop fade, or oxidation in this at all, its fresh to me on the hop side, so juicy its drippy, a great expression of nelson hops too, a varietal i have always loved in this funky beer context. the first third of the bottle is nice and fizzy and clear and light, but more and more sediment after that in each pour, always very lively, very much a champagne vibe to this, white wine, white grape, neutral oak, and high effervescence. the smell is very mature brett, a clean saison yeast ester too, a couple of fermentation agents coming together here almost assuredly, some mustiness to it, wet grass and straw, funk all through it, wet animal, burlap. the hops are uniquely fruity too, not just vinous, kiwi, green gooseberry, honeydew melon, lemongrass, white tea, blooming flowers, the hops taste brand new even though this has at least a couple of years on it i think. oaky but not woody enough to be heavy at all, especially with all these bubbles, a drying and unique funk, very anchorage to me, i love this profile and buy these beers for it. very little acidity, so much funk. refreshing for how complex it is, an easy big bottle to drink solo, but one fancy and special enough that it should probably be shared more often than not. i wish these were less expensive, but you get what you pay for from these guys. top notch stuff here, especially with a little time on it! wow. nelson rules in this context too!

750 ml bottle into a tulip glass. Batch #1, had 3/24/19. Purchased a few weeks before having, gather it was almost two years in the bottle at that point.
Pours a bright, pale yellow, a little hazy, with a two inch foamy head with good retention and lots of foamy lacing. Aromas of Belgian yeast, grapes, lemon, light malt, wine, black pepper, wheat, Brett, a little funk. Has an herbal aroma, almost minty. Flavors of Belgian yeast, malt, wheat, grapes, lemon, some grapes, some Brett, a little more funk than the nose, oak, some coriander, a little grapefruit as it warms. A little hop bitterness throughout, a flash of sweetness midway. Dry, crisp, smooth, a good light to medium body, well carbonated.
The Nelson Sauvin hops work beautifully with the solid base, lots of flavors and aromas. While not a big fan of heavily hopped saisons, this is really nice. Liked Mosaic better, but this is really enjoyable.

Bottle: Poured a bright yellow/orangey color ale with a large white foamy head with excellent retention and great amount of lacing. Aroma of funky Brett notes with nice vinous notes is quite enticing. Taste is also a great mix of Brett notes with some vinous notes, nice floral hay notes with a dry finish. Body is full with good carbonation. This is a great saison with multiple layers of complexity while retaining great drinkability.

A: Pours a hazy soft lemon with high carbonation producing a 2-3 inch frothy/bubbly white head with decent retention.
S: Lovely white wine and honeyed melon hits from a foot away. White pepper, soft lemon, and a hint of barnyard funk.
T: White pepper and soft lemon hit first, quickly followed by white wine, honeyed melon, and barnyard funk (stronger here than in aroma). With a bit of warming, lime, grapefruit, and mango emerge. With even more warming, vanilla and oak emerge. Love how this unfolds.
M: Light body. Citrus tartness and sweetness. Some mild funk. Lingers and matures nicely on the palate.
D: I love brett. I also love Nelson Sauvin hops. This balances both superbly! Refreshing, super drinkable, and yet also layered and decently complex. Well done, Gabe/ABC! Seek it out!

Smell is surprisingly sweet with a lot of peach up front, backed by peppery brett and some grassiness.
Taste is fruity and even a little tart. Lots of peppery brett mingling with peaches, grapefruit, some yeast and a solid, grapefruit rind bitterness. Very thirst quenching and complex.
Mouthfeel is medium with bright carbonation.
Overall, a great, if not overly traditional, saison. Great brett bite works so well with the fruitness and the balance is impeccable.
