After pairing rich, roasty stout with oysters for years, enterprising European brewers started putting oysters in the beer in the early 20th century. Oysters impart a silky mouthfeel thanks to their protein-y-ness, and maybe a delightful hint of brine, to the Oyster Stout style. It’s even harder to argue against making beer with oysters once the season hits in Charleston. A bushel of succulent oysters harvested around Bowens Island were added to every 15 barrels of this beer, making it a truly local drinking experience. It’s particularly suited for that most Charleston of cool-weather food festivities: the oyster roast.

12 oz can poured into pint glass, didn't realize I didn't write a review last season, the time 2 cans exploded in my beer cabinet.
A: pours a rich dark dirty oil brown, short lived brown foam head, some carbonation
S: heavy semi sweet malt, light grainy aroma, hints of chocolate
M: thick body, semi dry finish on the tongue
T: roasted malt, chocolate, briney and slight salty taste, hint of caramel
O: great brew, not a huge oyster taste but very slight briney flavor

Drops from the can an opaque black with a dense, thick head of brown foam that quickly recedes. Malt and minerality in the nose plus a twinge of coffee and a suggestion of burnt bread. Medium to full bodied with a raisiny taste, pronounced bitterness and a lingering tang. Smooth on the palate. Some underlying sweetness tilts the scale back toward balanced and sticks around after the sip. A solid beer that could be even better with some cleaning up.
