Notes / Commercial Description:
We settled on Pluff Mud Porter as a year-round beer early in the planning stages of Holy City, stages that also included some wild ideas. One of these ideas was to bring bacon and beer together, literally. Coming from the smoked porter angle, we dabbled with how to get all the right aspects of bacon into our porter recipe without the potentially detrimental side effects. For the eventual full production batch, this meant 40 pounds of thoroughly flat-top cooked bacon, as well as bacon-grease-soaked wood chips, going into the fermenter. Kegging from the bottom of the tank allowed us to leave the fat behind, resulting in a decadent, drinkable porter with a porky soul.

Dark brown, no head.

Faint malt nose with a bit of smoke.

Nice balanced porter with a bit of smoke. Fairly bitter finish. otherwise generally unremarkable, but tasty and drinkable.

Mouthfeel is interesting. Like there's a layer of fine carb on top of a flatter, fuller base. Hm.

Decent but not amazing.

On-tap at Brewvival 2012

Pours dark brown with a thin khaki head that settles to a ring of bubbles. Nice aromas of smoke, chocolate, coffee, and bacon. Taste is spot-on with the nose, nicely balanced between the sweet roasted malt and the "bacon-ey" smoke. Creamy, with a medium-full body and good carbonation. Slid smoked beer, I need to make it to the brewery to try more!

A: Poured from a growler to a pint glass. Had a black color and a thick, muddy texture. There was a half inch of creamy, tan-colored, long-lasting head. Average lacing.

S: The bacon element is definitely noticeable, along with a good amount of chocolate.

T: Tasted of chocolate, malt, a big shot of the bacon flavoring, and hint of hops in the finish. Definitely an unusual taste, but oddly likeable.

M: A good amount of carbonation with a somewhat slick finish. Medium-bodied.

O: Probably not a beer I would drink all the time, but it's definitely worth a shot.

Appearance: Arrives with a dark chocolate color capped by a mocha colored head that leaves a few strands behind

Smell: Roasty, with chocolate elements; the bacon is subtle but discernable

Taste: Opens with the roasty and chocolate elements with the bacon coming on by mid-palate; despite the opening, the finish is slightly sweet

Mouthfeel: Medium body with moderate carbonation

Overall: Very nicely balanced; like the way this beer comes together with nothing over the top

 Appearance: Pitch black, no head by the time it made it's way from the bar to my table. 

 Aroma: Smoke, dark malts 

 Taste: Some fairly intense bitterness from smoke and bitter chocolate flavors. Bacon is more of a sensation rather than something actually tasted. 

 Palate: Very heavy, coating mouthfeel. 

 Overall: Drinks at a much higher ABV than listed. Really took some work to get this one down.

Wonderful dark elixir with a hint of ruby hues coming through, capped with a nice khaki tan head that slowly dissipates slow enough leaving some lacing on glass.

Smokey chocolaty briny wonderful aromas hinting toward BACON for real! I think I am in love again.

Taste follows nose and more, again smokey chocolaty briny goodness that supports the subtle grandness of BACON and BEER married in BLISS!!!! oooffah!

Just right on the palate, this brew is not heavy. Could easily drink this into a late South Carolina spring no problems.

Well, this cats at Holy City Brewing have the hardware to prove their skill and this elixir proves that creativity is flowing.

If you find this drink it and be greatful you did, I did and am, so now I know!
