Bottled December 2014. Poured from a 12mL bottle into a pint glass. Acquired as an extra in a trade.

Pours a muddy brown body with an off white head that reduces fairly quickly to leave spotty lacing and a layer of lacing.

Aromas of tart lactic acid, dark fruit, a lightly sweet caramel, herbal, sour fruits.

Heavily tart, nearly sour on the tongue, acidic with a sweet caramel backbone, dark fruits, cherry, dry astringent finish, burnt sugar aftertaste. High carb, medium body.

Solid brew, pretty complex.

Really nice dark Belgium, slight balanced raisin taste. Really enjoyed it but unlike some others I got no real sour taste and no real acid. Enjoyed it and will definitely get more.

Pour is dark ruby red with a tan head. Nose is sherry, vinegar, butyric acid, burnt malt. Flavor is black cherry, roasted malt, a hint of bitterness, sugary through the back end. A touch slick on the feel, moderate carb.

as always thank you to Matt for being the best trustee ever and keeping it going after the end of the cellar reserve...you forever have my gratitude. enjoyed from a stave snifter.

I don't usually dig darker sours but the sherry barrels add such a nice burgundy depth to the beer. really nice tart cherry flavors while still being very accessible although a bit fizzy and prickly in the feel. another home run sour from crooked stave.

Pours a very deep, almost black, ruby color. The very tart smell hits you immediately. A ton of barrel in the aroma. You pick up the sherry very easily. Taste is very tart and very dry. A ton of vinous tart flavor, with some sour cherry. Overall, great beer.

375 ml bottle, snifter

A – Rich, deep mahogany-brown. Light khaki head, a couple inches tall, with fairly long retention and a thin layer remaining on top throughout. High clarity, though nearly opaque due to density.

S – A lot of lactic tartness and acidity on the nose, maybe a hint of Brett funk. Cherries and red wine grapes, pinots. A hint of chocolate. Some fairly bright floral hops push though the sour aromas, along with some low vanilla and tannin.

T – Cherries and light plum, with a big hit of cola and light chocolate. Lactobacillus and perhaps acetobacter contribute moderate acidic tartness, lingering on the tongue and aftertaste but not puckering. Can still taste the base beer. Some floral-herbal hops, very low.

M – High carbonation, though thick and sudsy, countering a somewhat thin mouthfeel. Very sweet throughout, matched by the lactic tartness and fairly balanced. No bitterness to mention. Seems juicy and dry at the same time, leaning towards dry.

O – A good sour starts with a solid base beer, and that’s the differentiator here. The dark Belgian beer really holds its own and contributes character, and the souring is not out of whack. Excellent.
