Serenata Notturna is Crooked Stave’s take on a Belgian Strong Golden Ale, primary fermented with Crooked Stave’s mixed culture of wild yeast and bacteria in previously used Sherry Casks.
To further push the envelope with our mixed culture fermentations we knocked out a beer with a starting gravity of 22° Plato and fermented this beer to 12% ABV, a bit higher ABV then we usually brew at.

Bottle pour into a tulip glass.
Dark gold amber appearance, with a moist fruity oaky head that dissipates quickly. Grape, oak, sherry, spice on the nose and palate. Well balanced bitterness, full mouthfeel, slight more carbonation than preferred.

Appearance - The beer was maroon over a golden yellow base color.
Smell - The funk and lemon notes led the way. Bitterness was noted.
Taste - At the front, there was a strong funk presence. Notes of blackberry, red grape, and lemon followed. The sherry notes provided a certain cocktail quality. The sour funk lingered to the finish.
Mouthfeel - The body was viscous enough to allow the funk to linger.
Overall - The beer drank more like a saison than a wild.

375 ml bottle into a tulip snifter. Bottled Dec 2015, had 6/4/20.
Pours a darker apricot color, fairly clear, with a half inch quickly dissipating foamy head and very light foamy lacing. Aromas of malt, sherry, oak, caramel, some citrus, some wheat, light black pepper. Has a generally fruity aroma and smells lightly tart. The flavor opens with a good amount of tartness, then malt, wheat, caramel, some sherry and oak, some funk and citrus. It’s actually fairly sweet for what it is. Smooth, semi dry, a very good light to medium body, well carbonated.
Fruity, tart, the sherry casks are solid and bring out lots of good caramel and oak. Great aromas and flavors. A singular effort and very enjoyable.

Pours a nice shade of amber. Smells very funky. Tastes funky too - a little sour, a little bitter. Nice carbonation. Overall - I don't particularly like sour beers. I would drink this again.

Poured into a tulip, the appearance was a nice looking ruddy burnt dark amber color with a thin film of a little white foamy head that quickly softened to leave some speckled lace running here and there.
The aroma had some sweet to sour red cherries, light black cherries flesh, some sweet wood, just a whiff of vanilla, light earthiness, and ended with a touch of a blend of tart black and red cherry skin.
The flavor was moderately sour melding the sweet to the tart underneath and bringing in a touch of sweet to sour and woody stickiness in the aftertaste.
The mouthfeel was about medium bodied with a fair sipping quality about it. Carbonation felt fine, somewhat low, but good. However, I think this is an aged bottle despite me not knowing the date. Finish was semi-sour, slightly woody and a coherent smoothness.
Overall, American Wild Ale? Yes, I can see it, a bit "deeper" in it's body more than I expected for the style. I'd have again for me.
