A:
Pours a hazy straw with a finger or so of creamy off-white head that settles rather quickly to a film. Good retention; intricate, slippery lacing.

S:
Spicy and earthy. Lemon grass, white pepper, oak, bubblegum, barnyard.

T:
Tart, fresh, dry. Really tart up front with some earthy hop flavors and a funky dry finish. Straightforward and good.

M:
Really dry and medium bodied with a lingering feel and a dry finish.

O:
Pretty interesting saison.
This is a tasty and somewhat tart beer that uses barrel aging to make an already dry, quenching beer even more dry and quenching. Pours nice and smells/tastes nice. All-in-all I enjoyed it. I definitely like the slight Brett presence. I am ordinarily not a fan, but this one is subtle enough that I feel like I could maybe try something more in-your-face.
Would probably have again; worth trying if you're around CO.

Bottle picked up from Hyvee. I’m really excited to try it as I really enjoyed Hop Savant. Reviewed from notes.

Appearance: Poured into a Tallgrass Brewing Co. cervoise style glass the beer produces about a finger of thin, fizzy white head. Almost looked like a Berliner Weisse at first. Nice lacing and eventually a cap remained. Cloudy, honey colored body. I definitely expected more in the way of head from a saison style.

Smell: Ripe citrus fruit, some floral hops, and a big barnyard funk. Some damp oak if you look for it.

Taste: Tart citrus fruit, lemon juice, musty brett, a bit of pepper, dusty barrel, and toasted malts. A bit more sour than I expected.

Mouthfeel: Thin mouthfeel with a high carbonation. Effervescent. Drying. Refreshing.

Overall: A saison with nice citrus and barnyard notes. Ideal for summer since it has such a thin mouthfeel. Decent, but I expected more in terms of head retention, taste, and mouthfeel. Given the high price I'd say wait to try it at a tasting before picking up a bottle. Went really well with an herb goat cheese.
