Notes: Hypnopompa is our imperial stout brewed with almost 100 kilos of marshmallows and Tahitian vanilla beans (the size of cigars). Low carbonation and boiled a bit extra for good measure, this is a beer strictly for the stout inclined.

A - Deep oil black body. Light tan head pours 1/2 a finger high and settles into a medium halo. Low retention and OK lace.

S - Relatively light nose with molasses, cocoa and a touch of vanilla.

T - Thick molasses sweetness with a deep charred wood note. Edges of vanilla, pumpernickel, and woody booze.

M - Medium frame with par carbonation.

O - Not bad, but not of much marshmallow makes it through, and there's a little too much char in the flavor profile.

330ml bottle poured into tulip 19/10/13

A black as night but shes a dead pour, looks completely still, dump down the middle gives zero head, swirls do nothing but stick a little color to the glass

S roasted marshmallow, chocolate and vanilla, just missing the graham cracker for the smore affect, a little smoke, wood, and booze, faint licorice and prune, smells solid

T more booze and less marshmallow and vanilla, some sweetened espresso and charred wood, the nose takes it in this case

M thick and chewy, sticky as all hell, a little heat but shes dead flat, there's no life in there, numbing on the upper lip with a sweet char finish

O smell was there but plenty of room for improvement, shes pretty much flat and the nose alone couldn't carry it all the way

shes alright but not what I was hoping for, booze popping up here and there and carbonation issues, I think this is a country tic for me though so I'm stoked on that.

Poured into a Fremont small snifter. After stumbling upon the barrel aged version last year, I was delighted to find this bottle of the original. Pours pitch black, opaque in the glass with a bare half finger light brown head that dissipates slowly to a thin film. Nice aroma of sweet dark toasted malt, vanilla, dark chocolate and hints of lactose, almost like a milk stout profile. Flavor follows, with sweet dark toasted malt with a bit of char, dark chocolate, vanilla, hints of lactose and coffee. Nice mouth feel with medium creaminess. A quite flavorful stout that starts almost understated like a porter, but then develops a full, rich stout flavor profile with great chocolate and toasted malt flavors. Finishes chocolatey with light grassy hop bitterness. Well balanced and integrated. I really liked the flavor progression and finish on this a lot. I'll put a few of these away to tide me over until it rolls around again.

The best part of this beer was the way it kept the alcohol hidden. At 11%, I could hardly taste it. That said, not of the other flavors (marshmellow etc) came through. A decent beer, but probably not worth the price for the 12oz Bottle. I find that to be the case with many of the Omnipollo beers - just not enough bang for the buck.

Jet black, no head at all, zero in the way of lace. Smell is big and roasty, lots of chared malts, vanilla, roasted/burnt marshmallows, bit of a soy sauce like lingering presence. Taste starts off with a malty/soy sauce presence followed by vanilla, burnt marshmallows, chared flavours are a bit overwhelming, lots of burnt and roasted malts, sweet mid palate. Zero carbonation, sticky medium body. Pretty bad and virtually undrinkable, the lack of carbonation and overwhelming burnt flavours make this a strugle to get through even half the bottle, most of this saw the drain.

16 ounce can into snifter, 2019 vintage. Pours opaque dark brown/black color with a 1-2 finger fairly dense and fluffy khaki head with fantastic retention, that reduces to a small cap that lingers. Dense foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toffee, vanilla, cream, marshmallow, roasted nuts, toasted biscuit, and dark bread/crust; with lighter notes of raisin, fig, licorice, molasses, smoke, charcoal, wood, herbal, grass, pepper, and yeast/roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malts, vanilla, marshmallow, and light-moderate fruity yeast/earthy hop notes; with big strength. Taste of big milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toffee, vanilla, cream, marshmallow, roasted nuts, toasted biscuit, and dark bread/crust; with lighter notes of raisin, fig, licorice, molasses, smoke, charcoal, wood, herbal, grass, pepper, and yeast/roast/toasted earthiness. Light herbal, woody, grassy, peppery, roast, charred bitterness on the finish. Fantastic complexity, robustness, and balance of dark/roast/bready malts, vanilla, marshmallow, and light-moderate fruity yeast/earthy hop flavors; with an awesome roast/hop bitter/sweet balance; with no cloying, acrid, astringent flavors after the finish. Lightly increasing dryness from lingering hop/char bitterness. Medium carbonation and very full body; with a very smooth, creamy/silky/velvety/bready, and lightly slick/sticky/chalky mouthfeel that is great. Minimal warming alcohol for 11%. Overall this is a fantastic flavored imperial stout. All around fantastic complexity, robustness, and balance of dark/roast/bready malts, vanilla, marshmallow, and light-moderate fruity yeast/earthy hop flavors; very smooth and dangerously easy to drink for the ABV, with the mellowly bitter/drying finish; great soft/silky feel for the ABV. Fantastic balance of super rich malt complexity, marshmallow, and vanilla flavors; with balancing earthy hops and restrained fruity yeast. Light residual sweetness with lingering hop/char bitter dryness. A highly enjoyable offering, and outstanding style example as expected of the brewery.

BOTTLE: 33cl. Brown glass.

11% ABV. "Imperial Stout Brewed With Marshmallows & Tahitian Vanilla Beans." Brewed at De Molen.

HEAD: None whatsoever. No lacing.

BODY: Opaque solid black. No yeast is visible within.

AROMA: Authentic (read: unartificial) vanilla bean. Chocolate malt. I detect no marshmallow. Certainly on the sweeter side.

Aromatic intensity is average for the style.

TASTE: Vanilla bean is the only truly expressive flavour in the build. Chocolate malt, dark malts. Definitely sweet, though marshmallow isn't noticeable in my opinion.

Simplistic for an imperial stout, but enjoyable - if a bit too sweet.

TEXTURE: Smooth, wet, medium-bodied, and of adequate heft and weight on the palate.

OVERALL: More commitment to its advertised flavours would be nice. It's nice as-is, albeit a forgettable expression of the style compared to leading international imperial stouts. Glad I got to try it, but it leaves a lot to be desired (especially at this price).

Potentially an off bottle. Very strong grainy taste with a sharp bitterness that lingered on the tongue. Nothing close to the barrel version.
