Drawing inspiration from the fidelity of a saison — rustic, alluringly cloudy and crisp — this imperial IPA was brewed using oats and wheat. Dry-hopped twice and completely untouched post fermentation to preserve aroma and flavor.

Sample from bottle, at my son Steinar's place. The bottle was 60% full of trub / yeast sediment. Extremely cloudy even in the glass, yellow colour. Nice aroma of citric and piney hops. Very piney flavour, also citric hops. Bitter finish.

very much stoked to see some omnipollo draft in idaho, i know only a few bars can really swing the spendy and fancy kegs like this, but i am thankful for them. this is a rather delicate ipa for its strength, really well refined for being hazy, and somewhat of a fermentation forward beer despite it being hop driven. its got a subtle but appreciable yeast character, and through the inch of shaving cream thick white head i can smell subtle almost french saison esters along with a more fruity belgian element to it, although seemingly not fermented warm enough to let these run wild, or else perhaps multiple strains were pitched and there wasnt much left for whatever this yeast is to process by the time it was added, i dont know how this was made, but its nuanced beyond most of that else is available in the style out there. the hops have just a little bite but remain kind of soft and summery, kiwi and green melon, white grape, maybe a little papaya or something tropical, not real citrusy to me, good balance from the dry cereal malt, and tied together by this subtle yeast thread. its dynamic and fast finishing, hides its alcohol well, has effervescent carbonation from the tap, and drinks way too easy for what it is. a little oily slickness to the feel, but its nearly gone on the swallow each time i take a sip, cold or warmed up a bit. an excellent offering here, and i can see why its one of their more popular beers!

Can to tulip.
The appearance was a nice looking burnt yellow/orange semi-dark woody color. Super thin rim of white foamy head. This fell off delicately to try and coat the glass, some sly messy lace.
The aroma had some orange marmalade tones meshing with some grassy hops, citrusy notes, light pineapple and a clean malty note.
The flavor leaned towards the sweet side through the pineapple, citrusy and malty character. Mild aftertaste of orange marmalade and pineapply mixed in malts.
The mouthfeel was about medium bodied with a fair sipping quality about it. Nice low carbonation. Mellow finish of pineapple and citrus.
Overall, pretty nicely done DIPA worthy of more pours.

Bottle from my brother. Leaning heavily towards the Belgian IPA style, light bodied, also borrowing from the Saison style. No evidence of the 8% ABV. Light, tangy, would never guess IIPA.

Very cloudy, basically no foam. Almost looks like grapefruit juice in the glass. :-) Very citrusy aromas, hint of pine, grapefruit rind. Refreshing, crisp, not too bitter but lots of flavour. Good carbonation. You don’t notice the higher alcohol content, it’s very well balanced.
