Bottle purchased at AJ's Beer Warehouse in Henrietta, NY.
This one pours a golden hazy yellow, with a big one and half inch fluffy head, and a lot of lacing.
Smells wonderful, tart grapefruit, orange, pine, grass, pineapple, and wheat.
Omnipollo's IPAs are just so killer, and this is yet another example. The oats and wheat really do add nicely to this one, the wheat provides a slightly tart bitter kick to this, a really nice base with which they layered grapefruit, orange, pineapple, and melony hops. There's a good amount of bitterness on the end of each sip, piney and clean. Delightful.
This is medium bodied, with a slightly creamy mouthfeel- thanks to the oats. This is really, really drinkable, the bottle went down alarmingly fast.
Omnipollo describes this as their house IPA, and it's a near perfect little flagship for this incredibly talented brewery.

Why is it so hard to capture the true identity of IPA? By laying a crisp, clean and dry foundation; the malts take a serious backseat and only act to support the hops with its arid and frothy structure.
And all that stars with the hazy straw pour that builds a creamy meringue to cap the ale. As those bubbles methodically pop, they reward the palate with tangy fruit acidity, bright citrus and herbal grassy character that the style enjoys the most. But hitting the tongue all that goes away...
The early palate is stricken with the arid dryness of aged citrus- orange, lemon and grapefruit leading the way. But as the ale settles on the tongue, its richer tropic medley rounds out the taste: gooseberry, kiwi, passionfruit, honeydew and mango bounce off the tastebuds and reward the palate with a sense of dry and tangy fructose as the bitterness rises and signals closure.
Medium-light on the mouth, its high effervescence bounces the ale from the tongue and ushers in a dry and refreshing texture that extends with those soft resins and echoes of citrus and tropical fruit, even if ever so swiftly.

A: Pours hazy golden straw with a big creamy white head that hangs around for a while and laces very nicely.
S: Citrus, plenty of sweet tropical fruit, a little pine, and some light caramel sweetness.
T: Bright citrus, lemon lime, a little grapefruit, a touch of pine, tropical fruit comes out as it warms, passion fruit, mango, pineapple, maybe a little apricot, a slight herbal note, and light caramel sweetness.
M: Medium body, moderate carbonation.
O: Very tasty. Just what I was craving.

From a 473ml can served straight from the fridge at 9 degrees Celsius into a stemmed IPA glass.
Look: The beer pours a veiled yellow/pale gold with 3cm of foamy, white head that dissipates into a partial film in 2-ish minutes. Decent lacing but overall poor head.
Smell: Quite mild and sharp. The aroma showcases American/New World hops with notes of citrus (grapefruit, orange, and lemon), resin (pine), as well as faint grass and melon. No apparent off-flavours.
Taste: Moderate strength and bitter. Follows the nose with American/New World hops with notes of resinous pine, grapefruit, orange, melon, and grass. The bitterness is pithy and dry. The finish is medium in strength and length as well as bitter.
Feel: Medium body with lively carbonation. Drying, astringent, and sharp. Alcohol is well-hidden.
Overall: Omnipollo's Zodiak is right down the alley of your average North American IPA's. It's a solid brew and I appreciate that it has certain nuances to it, but it's nothing special and I expect more from a beer with “Omnipollo” on its label. Not bad but I'm disappointed.

Appearance: A hazy golden orange colour with some small particles in suspension and a two finger white head that had good retention, and left nice lacing.
Aroma: Malty, grapefruit and pomelo.
Taste: Sweet malt, butterscotch, grapefruit zest and rind, lightly bitter finish.
Mouthfeel: Light bodied with moderate carbonation.
Overall: More malty than I expected, but this IPA definitely grew on me, and was enjoyable.
