Vintage 2015 bottle.
Bought at Systembolaget in Sweden September 18 - 2015.
This beer has matured for almost 4 years in my beercellar and I'm nervous that it is as good as I want it to be!
I pours black with almost no head.
Wow! This four year old beer smack my face with a nose full of dark chocolate, prune, rasisin and Bourbon.
Taste is in the same area: Dark chocolate, Oak Bourbon barrels, raisin, prune, coffee, vanilla, whipped cream and in the end Bourbon again.
Soft and smooth mouth with a ful body and light carbonation.
Perfection!

Black in color. Tan head.
Typical omnipollo stout base with lots of sweetness and cake batter. The barrels are there and the maple is there, but I feel like this is beginning to fall off. It just wasn't in your face like most omnipollo stouts.

On tap. Smell is a bit off-putting. Get some vinegar notes and roasted malts. Flavor is a bit vinegary. Possibly the maple syrup going bad? Not sure. Overall a very underwhelming beer, especially with the hype. Bummer

375ml bottle at Brasserie V in Madison, Wisconsin. Served in minisnifter glasses split between me and a friend.
Pours a dark black body, oily and opaque. Half finger white head, short retention, not much lacing, as expected. Smells of a rich bourbon and dark chocolate up front, with a distinctly maple sweetness in the background that comes out more as it warms up. Other aromas included a bit of grainy roast and nuttiness, but for the most part, it was bourbon and maple playing well together. Flavour was a mix of dark chocolate, roast, bourbon and charred oak, all playing together halfheartedly until the beer starts to open up, and the maple strolls in and starts mingling in with the other players. A very nice, complex beverage where no one adjunct really takes over. Mouthfeel is medium-fuller bodied, lighter on carbonation, on the lightly slick side with a sweet maple and bitter baker's chocolate finish.

Chocolate and booze. Silky smooth mouth feel. Hint of Bourbon on the nose and taste. Pretty hot. Delicious but pricey

Impressive offering from Omnipollo. I have had this bottle for a few months and was recently warned by a friend that one he recently drank was starting to turn—luckily no green apple, all good on that front. Actually surprised at the heat on a nearly year old beer...
Decadent, syrupy mouthfeel with a strong yet short fizz assault. Silky, creamy chew. Oily as The Situation at the shore in August. Black strap molasses, dark (this beer is opaque) roasted malts, BITTER espresso, vanilla bean, bitter-sweet baking chocolate. Fudge, brown sugar, prune. Overripe black cherry, dark plum, blackcurrant, fresh peppercorn. Touch of licorice & caramel. So many other "sweets" at play, the maple gets lost in the shuffle UNTIL sip end when when you're hit by a sublingual swell that rolls forward, up and around finishing on the tip. Just the tip. Hot, boozy bourbon oak. Nothing creepin' on you, this beer is cajones across the nose. That being said, a heat/sweet/bitter profile that aligns with my particular balance preferences...
Tasty, complex beer. Wish I had another bottle. And wish a little cheaper/more accessible.
