Bottled 7/2014.

Pours a hazy light yellow with a foamy off-white head that settles to wisps of film on top of the beer. Tiny dots of lace drip into the remaining beer on the drink down. Smell is sour with grain, white wine grape, white wine, and acidic aromas. Taste is much the same with sour grain, fruit, white wine, and acidic flavors on the finish. There is a medium amount of acidity on the palate with each sip. This beer has a good level of carbonation with a crisp and dry mouthfeel. Overall, this is a very good beer with fantastic white wine barrel aged qualities that are especially great in the taste.

750ml brown bottle, sample from the brewery.

Mildly hazed golden hue, thin lacing on top. Slightly vinous nose, mild tartness, wood, hint of funk, esters, floral, and peppery. Light smoothness, a little slick on the palate. Kiss of medicinal phenols, rose water, peppery alcohol, honey maltiness, wood, grape skin, and exotic fruit. Lots of layers, each sip opens up a new flavor. Simply amazing.

750ml bottle poured into a Side Project stemmed glass 11/28/2014.

A- Clear golden body, half finger white head, solid collar and minimal lacing. About what I would expect here, really. [3.75]

S- Rich white grape flavours, lots of tannins, slight leather and barnyard funk. Lots of chardonnay scents here. [4]

F- Rich white wine grape must, leather, funk, a bit of white wine grape sweetness and dryness as would be expected. A good bit of tannins. Nice complexity, especially if you enjoy grapes. Sweet wheat and grain sweetness as well. Good balance, again nice complexity. [4.25]

M- Thinner-medium bodied, lower in carbonation, nicely carbonated and crisp. Refreshing. Nice sweetness with a good bit of white wine dryness and tartness on the back end. [4.25]

O- Very nice white wine grape and white wine barrel-aged beer. Nice complexity, easy to drink, and certainly not lacking in any flavour. [4.25]

Pours light yellow hue with a white head that dissipates quickly. Smell was amazing. There is a grapey musty smell going on, and a whiff of funk. Like a blue cheese funk. Loved it. The grapes make their presence known in the taste, which then turns a tart/sour mix on the back end. A fantastic assault on the senses.

Poured into a Perennial wine glass from a 750ml bottle.
2014 release.

Pours a nice slightly hazy and pale golden color. There is a mild half inch fizzy white head that forms and recedes fairly quickly down to nothing.

Aroma is exquisite. Notes of white wine grapes, peach and apple notes. Tart and slightly sugary sweet. Delicious fruity aroma with some good mild acidity and sourness mixed in. Slight funk is present in the nose with some moldy, old woody oak and hay notes. Delicious.

The flavor is where this really shines. Layered and complex. Starts off with fruity apple, peach and tannic wine grape notes. Buttery white wine mixed in with some nice acidity. This beer has Cory King's signature all over it. The middle brings back some delicious grain notes followed by exceptional funk. Woody oak, hay and old barnyard notes are abundant throughout the middle and finish of the beer. While some nice slight acidic tartness rounds things of with sharpness. Mouthfeel is soft yet sharp and has a nice light approachable tartness and dry finish.

Overall I would say that once again Perennial continues to impress. Unlike the sourness of Savant Beersel, Savant Blanc brings more depth and complexity with a mix of sour and fruity all wrapped in a funky, vinous and woody package.
