Notes:
Mixed fermentation ale with Missouri wildflower honey.
A blend of three very distinct threads that were aged in oak for a range of 19-26 months before being blended, conditioned and refermented on 120lbs of Missouri wildflower honey and a house blend of Brettanomyces in stainless steel for 16 weeks.
This blend consists of 55% puncheon fermented and aged lambic inspired South City saison aged in oak for 26 months, 25% spontaneously fermented ale brewed on February 20, 2020, and 20% honey saison aged in second use bourbon barrels for 25 months.
Packaged into green glass bottles on January 25, 2022, where it has been conditioning since.

Pours murky orangey golden from the bottle, with a white ring. Smell has barnyard, wild and brett funk all present, lime, lemon, and wildflower honey in that order of intensity play off the funk. Taste is more tart fruit forward with bright oak backing, the funk is not as potent but still complex, flowers, wild honey, dry earth, and light faint nonspecific botanicals accent. Feel is tart and funky, could be drier and carb could be a touch higher, but as is it sips lovely in early spring.
