Oude Gueuze Tilquin à l’Ancienne (6.0% alc/vol) is a spontaneous fermentation beer, produced from the blending of 1, 2 and 3 years old lambics. It is unfiltered and unpasteurized, and refermented in the bottle for at least 6 months. The lambics used were fermented and oak aged in our installations. These lambics are coming from worts brewed by Boon, Lindemans, Girardin and Cantillon breweries.

25.4 oz bottle, snifter

A – Dark gold to light amber, some ruby tints. An inch-plus of thick, pink-white foam, with long retention. Brilliant clarity.

S – Very clear funky, barnyard Brett character. Some sweet, fruity notes, maybe some esters from the yeast. Bright and fresh profile.

T – Bracing acidity, farmhouse hay, and mild, wild berries. Sauvignon blanc and Brettanomyces. No aftertaste to speak of. A light tinge of green apple, not necessarily acetaldehyde.

M – A lot of tiny, thick bubbles, very high carbonation. Acidity, tart but not puckering; just a slight tingle on the finish.

O – I very rarely get to drink gueuze, so to find a renowned example and have the whole bottle to myself was pretty exciting. This is a beer that a lot of people would try and say “this is beer?” I let a couple people sip this and that was the exact reaction I got. It’s very brisk, refreshing, and seems simple and complex at the same time. Each taste felt new. I don’t LOVE it, but I think it’s a fantastic beer.

375ml Bottle received in trade from Phyl21a

Appearance – Golden yellow colour with a small size fizzy/rocky white coloured head. There is a low amount of carbonation showing and there is some fair lacing. The head lasted for around 2-3 minutes before it was gone.

Smell - Grains/wheat, vinegar, grapefruit

Taste & Mouth - The beer has an above average amount of carbonation. I can taste tart citrus (lemons/grapefruit), green grapes, and some vinegar. There is also some straw/grass and some light hops.

Overall – Really good stuff. There is a grapefruit pith type flavour that keeps its tart and refreshing. Maybe not a whole lot of complexity but still an interesting beer to drink. One of the better gueuzes I've had.

750 ml bottle poured into a RR stemmed glass @ 50 deg f.

A: 4.5 - Huge carbonation, the cork would have never stayed in place without the cage. Large off white fluffy white head composed of large to medium bubbles that slowly dissipate with great lacing and a continuous flow of bubbles from the base of the glass. Color is a straw golden yellow, crisp and clear, simply gorgeous.

S: 5.0 - O god damn Yes! Very characteristic and definitely a classic Gueuze aroma. A nice toasty bterry aroma with a hint of lactic sourness. Very earthy and quite similar in aroma to Cantillon's classic gueuze. Very citric and acid fruit like. This smells amazing!

T: 4.5 - Wow, very smooth carbonation with a gentle sourness and great but subtle Brett funk with very earthy citric notes. Very drinkable and refreshingly dry.

M: 4 - Very dry and refreshing with a slight bitter and a little bit tanic finish. Gentle Brett character that lingers and friendly lactic sourness. Very citric in acidity but very nice and very classic to the style.

O: 4.5 - This is a very tame yet complex lambic. A definite classic flavor profile but a little too smooth and clean. I couldn't wait to drink this but that's most likely my problem. It will definitely improve with age but a must have without to truly get a feel for this amazing lambic. A definite must try.
