Oude Gueuze Tilquin à l’Ancienne (6.0% alc/vol) is a spontaneous fermentation beer, produced from the blending of 1, 2 and 3 years old lambics. It is unfiltered and unpasteurized, and refermented in the bottle for at least 6 months. The lambics used were fermented and oak aged in our installations. These lambics are coming from worts brewed by Boon, Lindemans, Girardin and Cantillon breweries.

A- A bright medium-pale orange body with some white bubbles on top. Even with a slow pour, there is not much of a head to speak of. Body has a slight haze to it, but light shines through. Small trances of yeast sediment, but most stayed in the bottle.

S- Sweet ripe fruit, hints of funk, fresh grass. Pretty potent, but not overpowering.

T- Sweet up front, with tartness coming in almost right away. The middle brings in some of the earthiness with hints of malt, then the tartness takes over again with unripe fruit towards the end.

M- Very prickly carbonation with a huge amount of dryness at the end. Lingering tart taste that stays on the tongue well after each sip.

O- Each sip changes the complexity of the flavors. At first I was getting some fruity flavors and sourness, then almost an earthy funk flavor, then sweetarts, then unripe fruit. It just bounced around, making each sip unique. A really interesting beer. The bottle says the ingredients are simply: water, malt, yeast, hops. Pretty amazing to see how diverse 4 simple ingredients can be.
