The beer has a light tan and bubbly head that dissipates quickly. The beer has a a brown and dark orange color that is clear and filtered. The beer's smell is dominated by the Cascara smell. The Cascara smell resembles the way celery does and has a clean crisp smell. The Cascara dominates the bitter and slight floral hop smell. Additionally, the beer has other herb smells that I could not identify. The malt smell is light and sweet. The beer taste is similar to how it smells but with a lighter cascara presence. Even though it is lighter, the cascara makes it difficult to taste other flavors. The other flavors tend to be the sweet malt but that's it. The feel is smooth and clean. Medium bodied. Biting carbonation. The beer is certainly unique and different because of the cascara and using the cascara works but might make it too different for the average person. Overall, a decent and certainly unique beer.

a wheatwine brewed with cascara, which if I remember correctly is the outside of the coffee bean, like the corn husk or something similar. new Belgium made a disastrous quad with it, so I was eager to give it another chance as a brewing additive. good call. this beer has a honey color and consistency on the pour, with only a minimal white head. I smell a really smoky something here in front of the wheat malt. its almost like a poblano pepper, slightly capsicum heavy, hot. its nice aromatically, but it doesn't influence the flavor one bit. I get a coagulated protein sort of feel, and an alcohol rich autumnal essence brew, something earthy and woody, must be the cascara, and a guess a touch of smoke, but this is an odd flavor profile. not disagreeable, but challenging. it is well enough carbonated for me, but comes on a little too thick and strong to be super appealing. a risk worth taking, but not a beer I feel the need to revisit anytime soon.
