Poured into a Gulden Draak tulip. Pours a hazy, medium orange amber with some light particulates floating around. Bottle popped so robustly, I thought this might be a gusher, but it was well behaved. Nice big four finger ivory head with good retention and tons of pillowy lacing. Aroma of bready malt, pear and apple, light stone fruit, clove; slight mineral. Flavor follows aroma, with bready malt, mixed light stone and apple family fruit, clove, a little caramel developing in the finish, which is sweet fruit, clove and mild hops. Medium bodied with moderate creaminess from the fine, active carbonation. A nicely made Belgian pale. The flavor is not as intense as the quite promising aroma, but it well balanced and covers the expected flavor profile. The carbonation is excellent. Brewed by Chimay, and although it won't knock Blue of its pedestal, still a flavorful, pleasing Belgain pale. I'll get this again.

Amber colour, thin head with lace and ring. Smell of dark fruits, citrus, candy, honey. Medium body, sticky palate. Normal carbonation. Taste is like the smell: dark fruits specially, with hints of caramel, honey and citrus.

A trappist beer brewed by the monks who brew Chimay (Abbaye de Scourmont ) for the monks at Abbaye du Mont des Cats.
Nose: fruit, dark dried fruit, spice, bubble gum
Pours brilliant copper brown under a persistent moussey 1" off-white foam cap, lacy.
Palate: Big candy and bubble gum on the front that gradually gives way to hints of dried fruit, soft caramel, faint cola, and a hint of anise by the finish. A light hop accent joins with the malt to provide balance to this yeast driven beer.
The body is very creamy supported by above average fine soft carbonation. Slight warming.

Mont des Cats has a thin-to-medium, off-white, spongy head, very tight, fast bubble streams, a murky, orange appearance, and not much lacing left on the sides of the glass. The aroma is of mellow, sweet, spiced bread, bread crust, and possibleysome sugar. Taste is of those elements, with some yeast and light fruits, such as dates or figs. Mouthfeel is light to medium and prickly, and Mont des Cats finishes crisp, easy going, and not at all boozy.

Pours a murky dark honey orange with a foamy khaki head that settles to a partial film on top of the beer. Foamy patches of lace form around the glass on the drink down. Smell is of malt, toast, earth, caramel, and spice aromas. Taste is much the same with malt, toast, caramel, earth, and slight spice flavors on the finish. There is a mild amount of spice bitterness on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a pretty good beer with a nice balance of malt, caramel, and spice characteristics all around.

(purchased at Binny's - bottle code L13-776 - poured into a balloon)

A: cloudy copper liquid... very nice, tight, sudsy off-white foam with tiny bubbles - easily identifiable as a bottle-conditioned (perhaps infected) Belgian ale... good length of head retention, but no lace of note

S: medium-dark, bready melanoidins... dark grape, perhaps a touch of baked apple... faint dusting of cinnamon and sugar spice... almost a lager-like graininess... sort of a dying leaf aroma reminiscent of autumn in full swing... mist of spicy alcohol in the back... overall, pleasant smells, just not terribly vibrant, almost zapped out

T: (not so) surprisingly toasty, with a hint of an almost bacony smokiness in the distance, plus a light swell of caramelized grain and a dull, lingering (unsweet) dried apple and rose petal in the finish... naked malt flavors quite up front and arguably balanced with some familiar spicy yeast phenolics... strange, herbal, almost za'atar-like spectre in the aftertaste... nice punchy attacks, but not much underneath to give it some depth - guessing this bottle has been sitting around to the point of over-attenuation from the conditioning yeast, perhaps poorly handled at some point

M: about what one would expect considering some of the observations about handling and yeast: light-medium bodied, expanding carbonation sensation on the palate upon sipping, flat-dry, a bit sharp, with a dull, medicinal heat that keeps at the back of the roof of the mouth

O: this is an intriguing beer, one having been brewed by Chimay - I thought I read somewhere that the monastery was once a Trappist brewery - they are currently producing Trappist cheese, and I would imagine this beer goes fairly well with it... there's certainly some dynamic, uncommon flavors in this and it's a beer I would certainly revisit again if I were to come across a bottle in Europe
