The experimental process of brewing Rejewvenator® 2013 begins with 5 specialty malts and 5 hop varieties blending European tradition with brazenly innovative American craft beer flavor and attitude. The brewers use Lager yeast to start cold, bottom fermentation then let the beer warm and pitch a hybrid Abbey/Trappist Belgian Ale yeast brought in exclusively for this brew. Finally all natural Date and Fig Concentrates are infused into the fermenter. Rejewvenator® then sits and ages for several weeks before centerfuge filtration and packaging.

Opaque medium brown body with a fat finger of tan foam. Dark fruit galore, especially fig and date, brown sugar, yeast, and slight esters in the nose. Taste the yeast just seem off, more robust and grounded than expected, huge dark fruit, brown sugar, and caramel are very sweet in contrast, clash a good bit, esters try to cover it all up but can only do so much. Feel is caught between the two styles, robust and airy without any clear direction, malts carry after yeasty burst

At over two years old I didn't know what to expect, but this beer came through and impressed me with its sweetness and it's complexity.

"How better to celebrate the evolution of the year than with recipes inspired by generations of the original craft beer warriors, the monks! Top with a healthy dose of Scmaltz & witness the rebirth of Rejewvenator!" Brewed in the hybrid style of a Belgian Dubbel Ale and German Doppelbock Lager with date & fig concentrate added. Available as a limited release beer in 22 oz. bottles and on limited draft.
Poured from a 22 oz. bottle to a tulip glass. Served above 53 degrees Fahrenheit.
(Appearance) Pours a frothy foam head of a caramel cream color over a dense and hazy moderate brown body. Retention is good and lacing is light and streaked. 4
(Smell) Malt blends of biscuity and bready caramel, soft pale malts and a very mild graininess. Fermented tart fruit juices with a low sweetness. Potency is moderate. 3.5
(Taste) Up front, acidity masks a bready, grainy, chewy blend of pale German malts, some chewy caramel malts and a bit of sharp grain. Fruit juices are fairly tart and funky throughout, and much of the residual sweetness has been fermented out but it drinks only moderately dry, finishing on a blend of earthy grain malt, tart but syrupy fruit juices and some creeping funk sourness. It's kind of messy at its current age, but I appreciate it in this particular stage as the funk bite has rounded out the flavor for the better. 3.75
(Mouthfeel) Texture is lightly chewy, moderately tart and acidic, and moderately chalky dry. Carbonation is moderate to high generating a medium frothiness and a brisk, full crispness. Body is medium/heavy for the style and medium/heavy overall. Balance is tart, acidic and funky sour over sweet. Alcohol presence is moderate and there are no negative off characters. I am uncertain of whether the strong acidity and funk is a result of fermentation or infection, but I find it rather enjoyable and uncommon; nonetheless it really works for this beer. 3.75
(Overall) This was one very funky beer especially with about a year of age on it. While approaching this cautiously due to the use of concentrate figs and dates, I enjoyed the more tart, acidic and sour angle that these fruits generated against the more predictable malt and fruit sugar body. There's still the offsets through peeks of graininess and nips of alcohol, but this was one beer in which imbalance didn't necessarily make things worse. I could always go for a beer with a sour bite to it, and whether this was infected or not, it worked out nicely in the end. 3.75

I stopped into a new liquor store and found this for $1.00. I picked one up and I am pleasantly surprised. This is a very drinkable beer. I'm going back tomorrow to pickup a couple of bottle to hand out to my friends.

2013 edition, opened one evening in December 2014 before enjoying an marathon of Always Sunny. Looking for something a little funky tonight, and this dubbel doppel comes close.A: Pours a brownish garnet or a reddish brown (I can't decide) into my trusty tulip. A slightly aggressive pour yields two fingers of delicate head, which still looks thin. The bubbles dissipate quickly, leaving a pool in the middle of the surface with almost no lacing left. S: Either something is wrong with me or the smell is pretty subtle. Alcohol, apricot, fig for sure. Maybe a bit of yeasty dubbel, some grape undertones. T: Not dubbel, not doppel. Burnt dates, more fig, some malt and a wine-like consistency I wasn't expecting. If someone handed me this a said it was a lambic variety I wouldn't bat an eye.
O: Easy to drink, great color. If only the alcohol smell wasn't so present in nose. Not bad, but not for someone expecting a dubbel.

2013 limited release opened Dec 2014. Seems about right for Hannukah.
A - Beautiful looking beer. Deep pomegranate and chestnut body. Soft off-white foam head.
S - Sweet nose. Brown sugar, figs, raisins, prunes, Touch of cordial.
T - Apricot, burnt figs, raisins, cinnamon, brown sugar, and caramel. Pleasantly sharp woody hop note through the center. Chocolate cherry liqueur finish.
M - Medium body with a drinkably light finish.
O - Surprisingly good. A year did this beer well.

From the bottle into an Innis & Gunn footed pockal glass. Aged for 1 year (purchased in Winter 2013, reviewing in Winter 2014)
Visual (4): A very nice dark copper/brownish hue with great clarity. Head settles into a half-finger off-white layer that is dense and creamy looking. Good carbonation bubbles in the body that aid in a lasting head. Really a great looking beer that would have benefited from a bigger, more robust head.
Aroma (4): A touch of booziness on the first sniff, complimented by aromas of dark fruits including the mentioned date and fig, but also plum and some raisin. Reminiscent of a subdued Belgian Dubbel - fruity and tart, but with a lightness compared to it's Belgian likeness (likely the cleanness of the lager yeast).
Taste (3.5): Sweet and tart - the initial sip gives a light fruit sweetness, but the overbearing finish is a strong, fruity tartness that lasts at the back of the mouth. The dominating sweet and overall tart flavours of the beer really do hide any indication of the higher ABV.
Mouthfeel (3.5): Carbonation is medium and leaves a fitting courseness on the pallet. It would be a good beer to pair with food, as it preps the pallet nicely. Tart, fruit flavours are complimented by the medium-light body and overall active carbonation.
Overall (3.5): The tart flavours dominate both the taste and the aroma, but are complimented by the mouthfeel. It seems the fruitness of the dubbel style comes through in the flavour, while the high clarity and crispness on the pallet shine from the lager yeast. A unique beer that is worthy trying, but not outstanding in it's own right.
