Notes / Commercial Description:
A 4 –grain beer brewed according to the original Wilderen kanunnik recipe. A mild herbal triple with reyeasting in the bottle and a mild aftertaste due to the use of fine & noble species of hops. In this beer in addition to barley, wheat and oats sometimes also rye is added which gives this Triple its typical character.

A: The beer is slightly hazy dark golden yellow in color. It poured with a finger high bright white head that died down and consistently left a short head covering the surface.
S: Moderate aromas of Belgian yeast are present in the nose along with hints of candu sugars.
T: The taste follows the smell and has additional hints of peppery spices.
M: It feels medium-bodied and slightly dry on the palate and has a moderate amount of carbonation.
O: This tripel is rather drinkable because it hides its alcohol very well.

Poured from 750 mL bottle into snifter.
A: Pours a clear light golden yellow with high carbonation producing a 2-3 inch bubbly white head with good retention as the carbonation jets continue to fuel the head.
S: Mildly musty-funky yeast, dry toasted cracker malt, hint of earthy minerals, and white pepper plus more spice I can't quite discern.
T: White pepper and more lively spice (clove, vanilla...and more?) along with a lightly sweet honey note hit first immediately followed by the dry toasted cracker malt. Digging deeper, there are some fruity esters, funky citrusy yeast (almost reminiscent of a saison...almost, but not quite), and just a faint hint of earthy minerals and candi sugar. With warming, the honey and vanilla notes become more prominent and a soft cola note emerges.
M: Light-medium body. Clean, softly smooth, and lightly sweet. Lingers and matures nicely on the palate. Mildly spicy bite. ABV is very well hidden.
D: This one was a pleasant surprise! Didn't start as strong, but I really enjoyed the layered complexity in the taste. Very well structured, refreshing, and easily approachable. Bring this to your next summer gathering and introduce them to a quality brew!

Appearance: The beer pours a bright, slightly cloudy gold into my tulip. A big fluffy white head perches on top, but then drops rather quickly. Looks inviting.

Smell: The nose seems fairly standard – candi sugar, white pepper, a little honey and some breadiness.

Taste: A big sip reveals more of the same, along with increased amounts of traditional spice and a significant dose of hop bitterness that balances nicely against the honey and sugar sweetness. Wheat flavors seem to manifest themselves in toasty bread notes. There is also a certain mineral element lurking about, which is unusual but not at all unwelcome. Nice.

Mouthfeel: This one sits pretty light in the mouth due to a pretty high level of carbonation.

Drinkability: Probably a little more drinkable than your average tripel, owing largely to the carbonation and the lightness offered by the wheat element.
