Notes: Celastrina, or Hops Blue, is a tiny blue butterfly found living on wild hop plants along the Front Range of Colorado. Little is known about this rare species, but we hope to change that. Celastrina Saison pays tribute to this winged creature with delicate hints of banana and clove-like flavor, typical of a traditional Saison, that flutter with a subtle spice character derived only from the hops used. $1 from each bottle sold will go to the Colorado Natural Heritage Program to help fund research of the Hops Blue butterfly.

750mL C&C bottle poured into snifter

A – Beautiful beer, bright honeyed orange in color. Head is big, fluffy, and bright white. Settles to a 1/4" layer and leaves great thick lacing down the inside of the glass.

S – Fruity, fragrant, and bright. Big lemon, wildflower, and light yeast notes. Hops make an appearance too, piney and juicy.

T – Lemon, spice, and yeast notes here. More wildflower honey sweetness, and crisp, clean hops. Has great complexity. Light banana notes come through here, as well as a clove/anise spiciness. Balance is impeccable.

M – Quite dry and champagne like, carbonation is high, but it leads to a tremendously crisp and clean mouthfeel. Finish is lingering and brings notes of fresh lemon, and pepper.

O – Great Saison, nice to see Odell try their hand at this style. It stands up to some of the best I've had. This one stands out for its great balance and depth of complex flavors, as well as for its noticeable hoppiness that is not found in others of the style. Worth seeking out.

Appearance: orange gold, with a beautiful foamy, ivory head. No lacing.

Aroma: delicious fruity esters from the yeast, along with citrus from the hops.

Taste: tasty spicy notes form the yeast and hops. Very mild hop bitterness balances the malt nicely. Citrus is also present from the hops, as are fruity notes from the yeast.

Mouthfeel: fairly effervescent, though the carbonation is not overdone. Coats the tongue and mouth nicely with flavor, but does not linger too long. Fairly smooth given the carbonation level.

Overall: delicious! This is a winner in my books, as everything is nicely balanced. The hops are allowed to shine without overpowering the palate with bitterness, and are complimented well by the malt and yeast used. Odell has done an excellent job of crafting a Saison that is both complex and balanced, and is an easy-drinking and undeniably enjoyable brew. It is achievements like this beer that make Odell one of my favorite breweries.
