341ml bottle poured into tulip 22/1/14

A clear golden liquid, with plenty of bubbles, some tiny particles floating around upon further inspection, two fingers of foam has good retention slowly falling to a thick film leaving a few partial rings of lace

S quite fruity, melon, mango, grapefruit, and sweet orange, floral and piney, some wet wood of all things with some soft caramel

T more pine in the mouth, lots of lemon rind and a little less tropical fruit, woody earthy notes, some lime, tastes good but the nose has the edge

M medium bodied, a little foamy, some grit, pine and rind on the finish

O not a bad single hop brew, fairly well rounded and very drinkable

not much of the "Phillips' house flavor I've gotten used to, its not a bad thing but the IPA's start to taste the same but this one I couldn't pinpoint as Phillips blindfolded

341ml bottle, the current guest star in the the Phillips Hop Box mixed pack.

This beer pours a mostly clear, pale golden yellow hue, with two fingers of puffy, frothy, and rather shiny creamy off-white head, which leaves some pleasantly diverse snow rime lace around the glass as it evenly subsides.

It smells of a sharp pine resin and generic citrus rind bitterness, a certain musty herbal character, pale grainy malt, with a very subtle caramel sweetness, and a soft uric acid sourness. The taste is more bitter herbal, leafy hops, a somewhat woody mustiness, muddled citrus pith notes, dry grocery aisle melon, innocuous pale crackery malt, and further floral, piney hops.

The bubbles are generally well behaved in their assertiveness, the body a so-so medium weight, with a bit of clammy pithiness mucking up an otherwise decent smoothness. It finishes off-dry, the malt desperately holding on to this last thread of its existence, while the hops stand by in a strange deference.

These single hop experiments usually turn out ok enough, the hop's characteristics gamely displayed, but a certain one-sidedness is expected. Here, however, the Simcoe varietal pulls multiple duties in fleshing out a complex, if not always consistent west coast IPA. Good stuff.

The current rotating selection in the Phillips Hopbox, a mixed pack of IPAs. Pours an orange-amber classic IPA hue with ample off-white foam. Aroma is wickedly complex and redolent with citrus and tropical fruit, pine, cat, and caramel malt. What you'd expect from a Simcoe showcase. Palate reflects all this and more. There are grapefruit and lime citrus flavors, musky guava and passion fruit notes, melon, blackberry as per the wet infusion tasting notes from the Hop Aroma Compendium, and some pine/green flavors, although the latter are not as pronounced as Simcoe's rep would suggest. Someone used a fairly light hand with an eye towards showcasing the hop's flavor complexities rather than overpowering the bitter receptors. There is plenty of malt sweetness to provide balance here, and I almost found myself wanting more emphasis on the hops, but only for a moment. This is a beer to be savored and deconstructed via the palate.
Addendum: An example left to sit for a few more months will have more pine and cat character.
