750 ml bottle, no dating on it so I'm not sure exactly how old it is but I do know I bought it in late April so it's got at least 4 months of age on it. Served in a Unibroue tulip, the beer pours a hazy orange/amber color with a couple inch off-white head. Head retention is good, and there's a decent amount of lacing. The brew smells like smoked malt/meats, sage, peat, stone fruit, citrus, and some vinegar. The taste is similar to the aroma, but there's the addition of some tart apple, peppery spice, and bready/grainy malt. It's a unique mix of smoky, tart and fruity flavors. Mouthfeel/body is medium, it's a bit coating with a good amount of carbonation. It's also smooth and easy to drink. It's a real interesting beer, but overall I liked it. It is smoky, so take that into consideration when you decide whether or not to buy this one. I'd drink this one again.

Poured into a Thistle glass.
A - Great looking beer. Orange color with tall pillowy head that stays for awhile.
S - Smells great. Has a funky, earthy, soapy not quite sour aroma.
T - Here's where it gets tricky. There's a lot going on here, and I'm not sure all of it is good. First you get a somewhat sour flavor, then there's a long middle period where you get a lemony something that I can't describe, and then at the very end the smoky gouda cheese flavor comes along.
M - Mouth feel is soft, mild carbonation.
O - On the one hand I appreciate the challenging mix of flavors. On the other hand, I get the sense that it's not all working exactly right. Am I glad I tried it? Yes. Would I buy it again? No.

750 ml bottle into tulip glass; no bottle dating, but is a recent release. Moderate gusher upon opening. Pours moderately hazy/cloudy bright orange color with a 1-2 finger fairly dense off white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the head. Aromas of big tart lemon, lime, orange peel, green apple, sage, wood smoke, pepper, wheat, bread, hay, straw, grass, light vinegar, musty funk, and herbal/yeast earthiness. Damn nice aromas with good balance and complexity of fruity/funky/spicy yeast and moderate smoked/bready malt notes; with good strength. Taste of tart lemon, lime, orange peel, green apple, sage, wood smoke, pepper, wheat, bread, hay, straw, grass, light vinegar, musty funk, and herbal/yeast earthiness. Good amount of earthy yeast spiciness and light tartness on the finish; with lingering notes of lemon, lime, orange peel, green apple, sage, wood smoke, pepper, wheat, bread, hay, straw, grass, light vinegar, musty funk, and herbal/yeast earthiness on the finish for a while. Damn nice complexity, robustness, and balance of fruity/funky/spicy yeast and moderate smoked/bready malt flavors; with a great malt/yeast balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth, crisp, and slightly acidic mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a damn nice smoked saison style. All around great balance, robustness, and complexity of fruity/funky/spicy yeast and moderate smoked/bready malt flavors; and very smooth and crisp to drink for the ABV. A very enjoyable offering.
