Notes:
We brewed this French Saison to transcend the noise. Additions of Lemon Balm and Verbena to the boil add an aroma of herbs and fresh zested lemon. Take that beautiful base beer, age it 6 months with Brett Clausenii, and for a real treat, we some oily, herby goodness.

A: The beer is hazy yellow in color and has a moderate amount of visible carbonation. It poured with a quarter finger high white head that died down, leaving a patch of bubbles on the surface and a narrow collar around the edge of the glass.
S: Moderate aromas of floral and herbal hops are present in the nose.
T: The taste follows the smell and has flavors of herbals and lemon verbena with hints of funk. There are some peppery spices in the finish.
M: It feels light- to medium-bodied on the palate with a moderate amount of carbonation. There is some dryness in the finish.
O: This saison has an interesting mix of floral and herbs in the smell and taste that are accentuated by a little funk. There is a lot of complexity.
