Very Good
Category 5 IPACategory 5 IPA
Notes: The most powerful IPA in the Due South Category series, the Cat 5 is big on hops and big on flavor. Clocking in at 8.5% ABV and 96 IBU’s, the first bands of malts will make way for the surge of hops on the palate. Designed for the true hophead, this is not a beer for the faint of heart.

My (usually) local, in-person trader, tone77, has taken to flying south for the winter, having proven to be a nomadic snowbird. His return is also the harbinger of the arrival of CANs from the southern regions, which brings a renewed level excitement to Chez Woody and The CANQuest (tm)!

From the CAN: "Hand Crafted Ameri[CAN] Ales"; "The most powerful IPA in the Due South Category series, the Cat 5 is big on hops and big on flavor. I Crack!ed it open and stared, mouth agape, into the vent. I CAN't understand how they got it this full without anything untoward happening when I opened it! Brimful hardly begins to describe it. A light Glug later & I had a finger of foamy, tawny head with good retention. Color was an oh-so-slightly-hazy Amber to Deep Amber/Light Copper (SRM = > 9, < 13). Nose brought a 1-2 punch of dank hops & caramel malts and I recoiled from not being prepared for the onslaught! Mouthfeel was medium. The taste was big on minty, pine hops, underlain with grapefruit-citrus bitterness and shored up by the aforementioned caramel hops. Still, there was some heat to this one and an intake of breath following a sip really brought forth the mintiness. Whew! The finish was dry, but cool, very minty and quite refreshing. Only the (relatively) high ABV prevents me from reCANmending this as a regular thing. If you CAN get one, give it a try, but beware, a Category 5 is nothing to take lightly!

From BeerAdvocate Magazine #87 (Apr 2014):

Pungent, Rind, Bitter, Warming

One brewers IPA is another’s Double IPA, so from that we’ll take the brewers word that this is just an amped up IPA. This beer stinks, a good stink at that of pungent hops. The hefty malt base is big enough to hold up to this onslaught of hoppiness and even alcohol. A massive brew for drinkers with venturesome palates.

12oz can of unclear dating, poured into an unlabeled snifter today, 5/17/2014.

A- Slightly hazy orange-amber body. Two finger effervescent white head, good retention- drops into a thick film that sticks around for a while. Sticky lacing.

S- Pineapple, floral hops, toffee, biscuits. Yeast spices. Malt backbone is quite strong here as this smells particularly sweet despite the strong hop presence.

F- Pine, citrus, floral hops are strong here, with an even stronger toffee and caramel malt backbone that helps cut the hop sweetness quite a bit. the combination isn't the best, but it's certainly not bad at all.

M- Medium body that's on the verge of syrupy, good carbonation, with a bitter floral finish that is especially strong but not unexpected given the amount of hops that show up at the beginning. Slight booziness, which is a bit surprising.

O- Solid DIPA, nothing special or mindblowing but well-constructed and balanced. There isn't a ton of oomph behind the flavour profile which seems a bit muddled.
