Cellar 3 Series. Poured into snifter. This is one of blackest beers I've ever had. My wife called it, "beer noir." Thick tan head with generous lacing. This is a beautiful looking stout. The cork popped like a champaign bottle. It was actually difficult to open. The first smell is the bourbon, followed by chocolate and some vanilla. The initial taste is coffee, with some vanilla or caramel. There is also distinct cherry and then chocolate at the end. The bourbon is present throughout with a strong alcohol burn. Creamy and very smooth. Overall, this is a fabulous barrel-aged stout; one of the best I've ever had which means a lot since this is one of my favorite styles. I hope to find some more of this!

approaching the best barrel aged stout i have ever tasted, its one of a kind and positively among the best in the world for the style, no doubt about it at all. this is the cellar 3 series version, obviously brewed again since the one pictured here, not at all a different beer from what i understand, despite the double listing here on BA. wow, i cant say enough about this one, almost not much to say after how far above and beyond it goes. makes me respect green flash in a whole new way. well worth the almost 20 bucks i paid for this. its silky smooth looking, fluffy gentle light brown head on it, the color of the old light m and m candies. thick looking, but not overly viscous, aided maybe by the obvious carbonation, not dead and syrupy like so many of these. the barrel impacts it as much as the bourbon itself in the nose and taste, i smell oak and char as much as i smell the whiskey. notes of wonderfully rich espresso and raw chocolate are very forward in the nose and taste too, with that dried cherry element coming second. very mild vanilla, and not a ton of sugar happening here, which i also like. what makes it different is the earthiness, the bitter with mellow sensation, and a toasted marshmallow flavor without the sweetness. so much oak on this, but not overdone on the booze component, i mean, you cant feel or taste the alcohol at all, and it doesnt taste like whiskey, it tastes like stout, less common than it should be right? tip top quality here, genre defining even. id love to get my hands on an original bottle and see how its aged, but thank goodness for this cellar 3 series. i heard its even bringing rayon vert back out, that beer was just ahead of its time. this is a must buy if you see it. i will be buying another one for sure. i rarely do that, especially with beer at this price. unforgettable.

2015 Batch 01: Brewed in April 2013 with golden naked oats, dark crystal and roasted malts, then aged for 18 months in American oak bourbon barrels and bottled on February 16, 2015. Pours black hole black color with zero light anywhere to be found that leads up to a nice creamy 1 finger tan/khaki head that was full of tiny bubbles and faded very slowly, leaving excellent foamy lacing coating the sides.

Smells is odd and not what I expected from the look; it’s a mix of maple syrup, spoiled chocolate milk, oak, vanilla, faint caramel, toffee, yeast, rotting fruit like pears and cherry, and finally a whiff of stagnant leftover beer like the overflow in a bucket after a daytime keg party. The nose did not have the rich malt or bourbon I expected and was more like rotting fruit and cheap keg beer with a box of red wine dumped in it. Heartbreaking as the hype and looks had me excited for this bottle, but the nose registered senses and aromas that just don’t make sense. There is no sign of the ABV, but the sour milk smell leads me to question if this bottle is tainted.

Tastes a little sweeter than the nose, but the same off flavors come through like they did in the nose: spoiled chocolate milk, oak, vanilla, faint caramel, toffee, yeast, rotting fruit, maple syrup, cheap red wine like MadDog 20/20 and some mild coffee.

WTF? The bottle is gorgeous, the pour looks good, the ratings are high, and then I pop the cork and this borderline drain pour sits before me. I am struggling to get through 1 glass of this bomber; it reminds me of going down and eating bad sushi if you know what I mean…yikes, what happened here?!?? This bottle must have gotten contaminated as it crossed the US in my mail order because I’m having a hard time accepting that this beer could be this bad with so many high ratings and reviews. Done here, I need to get another bottle which I will age longer and pray for the best. At $20 per bottle it is a sin to dump half of this, but it’s that not enjoyable for me.

2/15/2016: Cracked open another 2015 Batch 01: Brewed in April 2013 and bottled on February 16, 2015. It's a year in the bottle and looks just as good but tastes just as nasty and infected. What a damn shame and waste of good beer and money.

The 2015 version is quite disappointing. It's too sweet and yeasty. Reminded me of a lesser Brooklyn Black Ops.

A: black body of ale, shiny obsidian; slim finger of tan foam atop left some scarce lace motes down the glass

S: chocolate malts and bourbon whiskey barrels - suggestions of molasses and vanilla

T: sweet roasty chocolaty goodness underscores a suffusion of bourbon; dark espresso notes with molasses sweetness; hints of vanilla, oak, and whiskey caramels...

M: medium-weight, subdued carbonation, drying vaporous finish; dark chocolaty bittersweetness lingers with faint bourbon traces...

O: an excellent BBA stout - currently marketed as Cellar 3 Silva Stout - hits all the marks you'd want in a BBA stout, leans toward the medium density-type, with a smooth and classy drink and finish. Highly recommended.
