Our quest was to make the best white ale we ever tasted, with the complex flavors of a classic witbier, all brewed with pure Icelandic water for a cool smoothness that is deliciously refreshing.

Wheat malt, pilsner malt, oats, bavarian noble hops spiced with coriander and orange peel.

This was poured into a mug. The appearance was a hazy yellow color with a slight transparency about it allowing a light stringy carbonation to be seen rising. A one finger white foamy head dissipated within less than twenty seconds. Mild ringy lacing stuck in rings. The smell had a nice sweet orange peel and lemon with a slightly spice to balance (coriander) adds a nice touch. The taste was slightly sweet and spicy through the citrus and coriander. There’s no aftertaste nor finish. On the palate, this one sat about a light on the body with a good sessionability about it. Carbonated nicely, this one strolls delicately across my tongue in a sweet sticky way. Overall, I say this was a pretty good witbier, definitely would have again.

Very promising pour...
a) That fills glass with 4 fingers of meringue head, and spackles glass with lasting lace and a film cap over a clear yellow body.
s) classic wit: coriander, wheat, pilsner, brightness, spice, orange, mineral water.
t) clean - it's the water - minerally - sets it above most - all the savory flavors in a favorable summer wit. Scrubbing citrus zest., with floral, peppery finish. Perfect.

M: Light bodied with moderate carbonation. Crisp. Nice finish. Clean.

O: Best or as good as any wit ale ever.

11.2 oz bottled 16.09.16. Stored at 42 degrees and served at 42 degrees in a hand washed and dried Jester King snifter.
Aroma – initially, coriander. Short-lived and fades to nothing.
Head – large (Maximum 4.5 cm, aggressive pour), white, dense froth, average retention, diminishing to no ring and no layer, just a few areas of bubbles fed by effervescence.
Lacing – none.
Body – light yellow, clear, effervescent. Some sediment in bottle (bottle conditioned).
Flavor – Unpleasant sourness. None of the coriander or yeastiness of the typical witbier. No malt, no hops, no alcohol, no diacetyl.
Palate – light, watery, lively carbonation.

A little diacetyl would have been welcome to give some flavor to this beer and counteract the sourness. One and done.
