Notes / Commercial Description:
Mixed-Culture Wild Ale w/ Persimmons and Apricots. The core beer is a heftier version of their base saison, fermented with organisms the brewers harvested locally, with a secondary fermentation with fresh, whole apricots, followed by the persimmons.

Faded yellow orange body with no head or lacing.

Flavors are citrus tartness up front, then hop bitterness followed by bursts of fruit. Carbonation is light.

Very good.

75 cl bottle

Pours hazy lemon orange, sugar white head dissipates to nothing.

Smells of sour apple, apricot, tangerine and sourdough bread malt.

Flavor is of white grape, lemon zest, orange citrus, apple cider vinegar, and sourdough and cracker malt.

Light to medium body, tingly carbonation on the tongue.

Nice citrusy wild ale, the fruit flavor is bright and enjoyable. Drinks wine-like, but sweeter and more citrusy. Goes down smooth. Not their best but a great example to send out to the RBC to introduce newcomers to their skills. I would have this again if it came back.

Poured from a bomber into a tulip

Pours with a pedestrian and fast-departing head with little lacing. Pours apricot-gold. A bit unsettling given the ABV.

The aroma is subdued but complex. Farmhouse funk gives way to the fruits billed on the bottle, especially the apricot and persimmon, with peach and plum/pluot.

The flavor is even more complex than the aroma, although funk and sour are definitely the stars of the show. The base saison characteristics are unmistakable, but the pucker factor is high. The "billed" apricot and persimmon are supplemented with grassy, citrus, and grainy yeast notes. The ABV is extremely well-hidden, with only a hint of booze on the palate.

The mouthfeel and finish are remarkable for the ABV. Very crisp and light.

Overall, I'm torn on this brew. It is definitely a "wild" brew, and has much to commend it, but I can't quite put it in the "must try" category. Still, I'd recommend.
