THE ALE: This clean, malty ale has a robust flavor with fruity, plum aromas. The carbonation balances the moderate sweetness from the malt, resulting in a dry and smooth finish. It pairs great with savory foods like barbecue, rich stews, grilled meats, and dark chocolate cake.

THE STORY: The Colombian Monks could really cut loose during the annual retreat hosted by Del at his home near Naivasha Lake in Kenya. Smiling ear to ear and with ale in hand, they would dance the night away! You might find you are doing your own little happy dance after a glass of Dancin’ Monks. Drink, dance, repeat.

1 pint 9.4 fl oz brown glass bottle with hood-and-wire cap (aka cage) over a cork acquired earlier today at the Hancock Center HEB Grocery and served into an Independence Brewing pilsner glass in me gaff in low altitude Austin, Texas. Reviewed live. Expectations are above average; I'm really in the mood for a good dubbel and I remember Adelbert's saison being pretty decent. "Bottle-Conditioned." Reviewed as a dubbel because it identifies as such on the label. 7.2% ABV confirmed. "Serve at 55-60 degrees." Batch No 006. Bottled 06/13/13.

Served chilled, not cold, and allowed to warm over the course of consumption. Side-poured with standard vigor as no carbonation issues are anticipated.

The cork popped off easily by hand, yielding a satisfying pop. No beer surged out; carbonation seems adequate but not overdone.

A: No bubble show forms as I pour.

Pours a two finger wide head of white colour. Disappointingly thin. No creaminess at all. Not frothy either. No lacing clings to the sides of the glass as the head recedes. Head retention is decent - about 3+ minutes.

Body colour is a hazy copper of above average vibrance. No yeast particles are visible. Quite light for a dubbel. Nontransparent. Translucent.

Atypical of the dubbel style. I'm a bit concerned, but it looks appealing in a general sense. It's not unique or special, but aside from its departure from style conventions there's nothing overtly wrong with it.

Sm: Has a young maltiness, evoking wort. Plenty of residual unfermented sugars. Malty sweetness has a vague fruitiness along with notes of honey, flowery nectar, and pear. Hopping is modest in strength and floral in character. Clove. Some zest. No real yeast presence. I don't detect any alcohol either. Fermentation doesn't seem as clean as the Belgian yeast should make it. Hints of spiciness and biscuity malts typical of a Belgian style beer. I'm not finding the dark fruit notes found in the best dubbels; there's no plum, dates, figs, etc. Some toffee, I guess.

An unrefined raw aroma of moderate strength. Misses the mark inasmuch as adherence to the dubbel style is concerned. I'm optimistic.

T/Mf: Definitely raw and young as suggested by the aroma. Also somewhat reticent and muted; the depth of flavour is horridly shallow for the style. Even the flavour duration is disappointing; it's hardly got any presence at all. Plenty of raw honey and nectary notes provide a sweetness alongside the biscuity malts and Belgian pale malts. Has a vague fruitiness including unevocative orange zest, vague pear, apple, and barely noticeable white plum. None of the dark fruit you'd want in a good dubbel. Unrefined sugars abound. The flavour profile itself is pretty flat, bordering on bland, without much differentiation or development of flavour from open to finish. Not gestalt, but it does have a loose cohesion. Still, I wouldn't call it balanced. Feels thrown together without focus; I'm not certain the brewers were in control of this one. Has a minimal floral hop presence. Too sweet.

No explicit yeast character comes through. No alcohol or other off flavours are present.

Smooth and wet. A bit too thick, with a slight lumpy honey-like viscosity. Nicely carbonated; bottle conditioning was an excellent choice. Presence on the palate is poor; the mouthfeel does not accentuate the flavour profile nor does it even fully facilitate delivery of flavours. Texture suits the taste only generally; there is no evidence here of custom-tailoring the mouthfeel to the flavour profile. Body is neither full nor satisfying. Unrefreshing.

Not oily, gushed, harsh, hot, or boozy.

Dr: An amateur attempt at a complex style. It's drinkable enough, but I expect far better at this price point. I definitely wouldn't want this again, and finishing the bottle won't be particularly enjoyable. There's little here that works, even considering the beer apart from the style. I'd recommend Adelbert's throw out this recipe and start anew. If this is their dubbel, I'm very hesitant to try their quadrupel. Shockingly subpar. I wouldn't recommend this to friends or trade partners. Fans of the style should look elsewhere; this won't scratch your dubbel itch.

Aging might help slightly.

Almost clear dark amber brew with plenty of foam in the tall Petrus goblet. Spritzy on the tongue with a substantial mouthfeel. Interesting aroma with a touch of oxidation and a faint sourish hint.

Flavor is a pleasantly malty and tangy with a gritty finish. Some raisiny flavors and that back of the throat scratchiness. A funny sweet and mineral combination. Green grapes with hard candy. Finishes a little flatter than I'd like. From the 750 ml bottle purchased at Liticker's Liquor in San Diego.

Damn needy Tunnel Man... Anyway, this stuff pours a hazy sunrise amber topped by over a finger of cream foam. The nose comprises lightly-buttery biscuit and very light Belgian yeast. Gotta say, this is one of the blandest-smelling dubbels in recent memory (nevermind the gaps therein...). The taste holds notes of mild orange zest, cinnamon, light maple syrup, light toffee, and light clove. There we go, better. The body is a light medium, with a moderate carbonation and a dry finish. Overall, a decent dubbel, though one that falls somewhat flat for me. It's barely there according to my nose, and sorta plain when my tongue gets involved. Still, it's far from bad.

On tap at the Draught House during the RateBeer Winter Gathering.

The beer pours a hazy brownish color with a white head. The aroma is a mix of toffee and caramel malt, with a little bit of Belgian yeast and some light fruit notes. The flavor is more of the same. The candy sugar makes the beer fairly sweet, as does a heavy dose of toffee and caramel. I get some cherry and orange notes, but their are fairly faint. There is also some Belgian yeast and some spicy notes in the flavor. Thin mouthfeel and medium carbonation.

A gift from friend Paul B; Thanks! Poured at a good temperature with a nice, thick, light tan colored, foamy head that lasts for a while and some lace. Color is a clear, dark honey amber with loads of bubble trails. Aroma is caramel, toffee, malt, yeast, wine, spice. Flavor's like nose and has carbonic tang up front followed by sweet then the flavors and bitter. Also has circus peanuts, and cloves. Body and carbonation are good. Finish is like flavor, fairly long and a hint of alcohol warmth.

750 mL corked and caged bottle. date of 6/13/2013, Batch 006. So a little more than a year old.

pours a clear golden cooper color, until the last pour with the yeast that's a bit cloudy. foamy bright white head, but it fades quickly. way too light in color for a dubbel. smell has a bit of that belgian yeasty funk, but not the complex malt that is expected of the style. same with the taste. just a bit of biscuit, underwhelming. mouthfeel isn't bad, a little bit of thickness, lower carbonation, coats the mouth.

overall - for the high price - just doesn't hit the mark for a dubbel.

A: Pours a dark hazelnut brown color. A two finger white head forms and recedes to a ring that sticks throughout. Lots of sticky lace is left behind.
S: Toasted malts, toffee sweetness, some plums as well. Simple, but enjoyable.
T: Follows the nose. Toasted malts with a nice sweetness. Toffee, figs, plums.
M/D: A medium body and carbonation. Creamy and smooth. East to drink. A nice bottle to sip on.

Overall, very enjoyable if a bit simple. Very much worth a try, and am looking forward to the Triple and anything else I can find from these guys.

Slightly hazy amber pour with an off-white one-finger head and a lot of carbonation. Grainy aroma with hints of dark fruit. Taste is sugary sweet with hints of bread, raisin, and nut in the medium body. Also has some light spice and yeast flavors in the finish.

translucent deep amber color. white tight head.

smell is loaded with Belgian yeast esters. Slight hints of toffee and caramel.

The taste is overwhelming dry. Initial sweetness is cut of almost instantaneously by that pervading dryness. Its a nutty dryness that I normally associate with Nut Brown Ales. Carolina Nut Brown comes to mind.

It finishes clean with a light sweet coating.

Its like a hybrid between a Dubbel and a Nut Brown.

Look: medium dark amber, thin white head. No lacing to speak of.

Smell: Slightly underpowered Belgian yeast smell.

Taste: a little smoky. Faint resemblance of a Dubbel

Feel: a little flat

Overall: not very good

Poured into a snifter and got a dark golden/amber beer that was mildly murky and filled with plenty of carbonation. Its topped off with a nice thick tan head that quickly thins into a thin smooth layer of bubbles. Very thick lacing makes the ale look more inviting. Mild malt and hops aromas come through mixed in with plenty of sugar, apple and berry smells. Over all, the aroma is pleasant and sweet. Its medium bodied and really envelopes your mouth, there is a good bitterness to it and some spices are present up front. The malts come out well, I cannot taste any hops and there is a slight buttery flavor in its aftertaste. Over not a bad dubbel

25.4 oz. bottle poured into goblet

L: tri-colored and clear, brilliant red, copper and gold with the darker red up top and facing into lighter gold on the bottom; huge foam out of the bottle, pours like a Belgian with at least a 1/2-inch tan/beige head, keeps a thick collar and almost full but light skin; clarity and color are fantastic; no sticking or lacing

S: wine, grapes ... can almost smell the alcohol, very red wine-like; nuts, peanuts

T: fruity up front, some wine/alcohol flavor; over time the nutty flavor takes over, but the fruit is putting up a good fight; not overly sweet to the point of an earthy taste joining in, almost dirt hop-like

F: solid weight, great Belgian-like carbonation

O: shows a good fruity promise early on but starts pushing forth that nutty/peanut flavor most American-made dubbels and quads have -- a flavor I've not encountered in Belgian-made dubbels/quads; the fruit taste is nice, and this one has very little sweetness compared to many abbey ales -- the brewer obviously didn't chunk in a bunch of candi sugar; a solid beer compared to other American-made abbey ales but no better than a C-minus compared to the real thing

750ml corked and caged. It pours clear copper with a frothy light tan head that seems to be trying to talk somehow. Noisy stuff. The smell is grapes, leather, and a biscuitiness. Is that a word? The taste is bready/biscuitty, with something resonant of peanuts and a sharp dry maltiness to it and a slightly astringent finish. The mouthfeel is very carbonated and a tad thin. Overall, an interesting one. I'm not sure its going into the regular rotation but I wouldn't turn one down if it showed up naked and drunk.

I picked this up in a growler from whole foods. Im a big fan of Adelberts and this was not disappointing. It poured a nice reddish copper with a nice white head that stayed a while but leaving no lacing. Taste was a little more boozy than others from Adelberts despite only having a only a 7.2 ABV. Up front I got a little prune/ raisin taste but not much else. The tastes were very subdued compared to other offerings from this excellent brewery. Overall it was a good beer but not one of my favorites.

- Bourbon color
- Sweet maltiness smell. Some strong, overbearing aftertaste. Warming, somewhat hoppy, not that sweet. An okay dubbel, not as comparable to the Belgian ones

Adelbert's Brewery Dancin' Monks Hand Crafted Belgian Style-Dubbel; Bottle Conditioned; Bottled in Austin, Texas on June 25, 2015; 7.2%ABV; 750ml Bottle; Corked & caged; $8.41, acquired at Spec's Wine Spirits & Finer Foods in El Paso, Texas on Jan. 9, 2016; Poured into Ommegang Brew Stem.

L: Pours a very nice, rich, medium-dark, hazy, reddish amber colour. Considering that this bottle has a fairly strong POP when removing the cork, it seems there's very little effervescence (puzzling, considering it is bottle conditioned & the "bottled on date?"). Almost a "Barley Wine-like" character (again, puzzling, considering a relatively low ABV, IMO). Am I wrong on this?

S: Considering the relatively low ABV, I find the alcohol level present in the nose. I was not anticipating that. Semi-sweet/sour plum notes come through, along with very subtle malt/yeast/bread notes, more so when served chilled. Malt/yeast/bread notes become more present as it warms, while semi-sweet/sour plum fades.

T: Alcohol, for me, is very noticable on the palate, not overwhelming, yet there. Not boozy. Again, semi-sweet/sour plum, along with very mild sour cherry. Almost "Barley Wine-like" character (how so, at such a low ABV?). Subtle malt/yeast/bread notes.

F: Virtually no effervescence. Wine like character on the palate (almost like a Moscato in character, not flavor), yet there is always a mild to medium sour/tangy character present.

O: Not what I was expecting, particularly given I drank a bottle of Flyin' Monks two Sundays ago. The lack of carbonation/effervescence leaves this brew wanting. Perhaps I have an "off" bottle? Perhaps my taste-buds are off after consuming a bottle of Iron Throne the previous night (IDK)? This is the very first bottle of Dancin' Monks I've had. I am willing to give it another go, yet not for a while, as I have too many other brews in my stash to get through. Prhaps this one requires some aging? How much, IDK?

This one leaves me curious, as I've now had the Flyin' Monks and Dancin' Monks and, I have one bottle each of Black Rhino and Philosofizer to try.
