If Saison as a beer style is related to the farm, Grisette is its counterpart in the mines. Fermented entirely in French oak, Lady in Grey owes her opacity to a high percentage of malted and flaked wheat. While her natural haze suggest sustenance, our Grisette remains bright and refreshing, independent and alluring. Lady in Grey's bohemian existence, her celebration of all things good, makes her a powerful muse of inspiration. We hope that you, too, will fall under this Lady's influence. Sante!

Bottle into SARA tulip.


Appearance is a bright straw/sun ray yellow, small what head that retains soft small compact bubbles as an ultra thin layer atop the brew. Traditional hazy farmhouse appearance.


Aroma features pungent fruit like mango, white grape, tangerine, passionfruit, some oak vanillin, floral brett component, and just a touch of spicy grains of paradise and strong basil.


Flavor is light but complex and attention grabbing. Plenty of barrel characteristics with some pleasant oak tannins and white wine like fruitiness. Also get a Jack fruit like banana/mango character, faint grass, mandarin, and orange creamsicle like note.


Mouthfeel is spectacular in that it's light like it's supposed to be and the carbonation has maintained an awesome level despite the barrel aging. A dry beer for sure with a lovely tartness that fades at the back of the palate and begs you to take another drink. Has this creamy character I love when encountered in these barrel aged farmhouse brews.


Overall another homerun by Sante. For a Grisette it's about as flavorful as you could hope for. Surpasses Side Projects Grisette considerably in complexity, balance, and mouthfeel. I just need to get my hands on a Clara to see how Hill Farmsteads compares. Whatever yeast strains Sante Adairius is using have me all worked up wanting more of there saison-type ales.

Poured from a 750mL bottle into my Brasseurs de Garde flute.

Cloudy citrine body with a smattering of off-white foam; vague lacing, poor retention.

A heady mix of funk, fruit, and floral notes in the nose suggesting pears and wildflowers along with a barnyard note.

Very tart palate entry, bracing and sweaty with a mineral laden finish. Stone fruit and dandelions lurk around the edges, while hop presence is absent except perhaps for a faint noble/grassy/white tea flavor at times. The bacteria and oak seem to be doing more of the work than the yeast in building the flavor profile.

Light bodied, though a bit too funky to be a refreshing table beer.

A decent domestic grisette that takes cues from Fantôme much more than Dupont.

Sample at Mikkeller Beer Celebration Copenhagen 2017, green session. Aroma is clean, floral, citrusy and fresh. Taste is slightly tart, floral, light, refreshing and easy drinking.

750 mL bottle poured into a snifter.

Appearance - Very pale yellow. Hazy. Big white head. Thick collar.

Smell - Lemon acidity. Mildly yeasty. Some grain and a bit of sweetness.

Taste - Lemon tartness and a little bit of white wine. Some wheat and grain. More white wine in the finish and it eventually takes over the whole finish.

Mouthfeel - Very light. Well carbonated.

Overall - I think it's white wine barrel, but not sure. Whatever that flavor is, it elevates it a lot.
