Huh, thought this may have been rated higher, but then again it is a Flanders Red.
And an American take on it on that. My verdict? I think it's the best Flanders style out there.
Things like Jacobins Rouge are great, but there's just a bit too much sweetness and acetic acid there. With Palimpsest, that's all taken care of. Palimpsest is drier, a bit more funk, very clean and just straight lactic acid to me (although it looks like some people picked up acetic, so YMMV).

this is tremendous, thanks to drlovemd87 for sharing it with me last night. what a boss. its different than any other take on this style i have ever had, and its lovely. for one, its as copper and caramel colored as it is brown or red, shiny and clear, a little thin looking, minimal head after the pour, just some patchy bubbles on the edges of my globe. almost still looking after a minute. smells fantastic, and in both the aroma and flavor i get a distinct rich italian red wine aspect. amarone or something, it has that raisin dried grape thing going on, with all kinds of sweetness and tannins running through it and flashing in at out at different times. insane really the depth and likeness of this. not sure if it was in a wine cask, but it wouldnt surprise me. i get a little less oak than i do in others, but the mellowing properties of it are there without the particular flavor so much. dried cherry, mature lacto, bright crystal malt, even hints of bourbon. the sourness is there for sure, its acidic and sharp, but its not overrun for a beer thats been in the cellar awhile, still under control, complimentary not overtaking. drier in the end that it is in the center, and fruity like the wine again as it winds down. its not very well carbonated at all, but with the thoughts of rich red wine in my head, i dont miss it as much as i might otherwise. a unique take on this style, none of the usual vinegar thing at all, and something to savor with close friends.
