Notes: An empty sea needs water, yet exposed reveals wonder known. Delight though firm, sometimes we need to view the inverse of something virtually and see its character and depth. Fermented entirely in oak puncheons Empty Sea is a simple take on complexity; an anti-blend, singular and alone. Unadorned and singular unique, Empty Sea is an effort to question ourselves for the sake of liquid truth. Sante!

750 mL bottle. Clear golden body. Smells of oak, lemon, light wheat, and some malt. Tastes tart. Some lemon. Oaky. Malty with a little sweetness. It is simple. Light body. Medium carbonation. "A simple take on complexity" is one of the dumbest descriptions I've ever read. Trying not to consider that in my review.

POured out a nice looking golden color with a white head on top. The smell of the beer has a nice funky citrus thing going on, very refreshing. The taste of the beer has a good amount of lemon-like flavors to it. The feel of the beer is light and crisp. Overall it's a pretty good brew.

Pours a hazy, bright golden orange color with tangerine and straw colored edges. Visible carbonation bubbling up. Two finger frothy white head that quickly settles into a thick, lasting ring. Sporadic streaks of soapy lace left behind.

Sweaty, musty aroma with lactic funk, musty cultures, earthy soil, farmhouse funk and Brett effervescence. Lactic blue cheese and tangy yogurt cultures. Strong oak presence but not burnt or too heavy of a toothpick character. Melon and apricot sweetness along with white peach and other juicy tropical fruit notes. Pale malt backbone with bread, biscuit and grainy cereals. Smells really nice.

Fuller end of medium body with complex barrel presence. Tart acidity but not overly sour. Very complex and well balanced with musty funk, dry Brett/champagne like effervescence and sweaty funk. Subtle lactic cheesiness with tangy yogurt. Bright and juicy tropical/citrus sweetness with lemon curd and strong citric acidity. Decent malt backbone with biscuit, bread and light fruit esters. Beautifully balanced and dangerously crushable. Another impressive beer from SARA.

750ml bottle poured into a tulip. The brew appears a hazy yellow color with a white cap that fades leaving stringy lace.

This has a lemony lactic zing to it that mingles with a earthy brett'd character that overall smells very pleasant.

The taste is equally tart with a lemony lactic aspect reminescent of greek yogurt contrasted by a sweet and fresh grainy character before a finish more like coriander meets lemon grass.

This is light in body with modest carbonation. It is crisp and pretty delicious. Im pretty much a SARA noob and have no idea what they are going for with the offerings ive had but I sure have enjoyed each of them. Thanks for sharing this one yourfragile.

Bottle shared by yourefragile. Thanks Michael.

Hazy light yellow body with a quarter inch of white head. Lemon funk with bright, floral hop character. Light in body. Tart with mild acetic notes in the finish. Tasty.

Was lucky enough to try this and many other Sante Adairius beers at a recent share as one of the guys was a club member at SARA! Loved this one, nice smooth and refreshing with light citrus notes
