Pours a hazy yellow color with a thin white head on top. The smell of the beer isn’t as powerful as I was expecting but has a subtle botanical aroma which is nice. The taste has a nice tart flavor, not much acidity which is good, the flavors of the gin tingle the tongue a bit. The feel isn’t overly bubbly but light bodied and dry. Overall it’s a very nice Saison.

This one pours a hazy golden yellow color, with a small head, and a bit of lacing.

This smells super botanical and funky, with lemon, berry, gin, honey, wine, juniper, and lime.

Gin barrels and saison go together so well - I wish more breweries tried to do stuff like this. The gin barrel adds so much fruitiness and funk - you could have sworn there was berry or lime, or something like that in this one.

This one is very drinkable, with a clean and pleasant acidity to it.

This is absolutely top notch stuff. I need more wild ales aged in gin barrels, stat.

Amazing beer! Not entirely sure what batch but probably the latest.
When poured, appear with a bright orange hue. Just minimal translucence hazy but no sediment or floaties. The aroma presented bright notes of lemon with just a mild barnyard funk. Sweet and slightly fruity. As it slowly warmed up, the spirits of gin begin to shine through with its earthiness and herbs. The taste was just as amazing. Again, plenty of lemon and sweet funk with very minimal acidity and sour. Very fruity (but with no distinctive type of fruit) with notes of herbs and citrus from the gin. Very flavorful and easy to drink. Mouthfeel light bodied with just slight acidity. Overall, a superb beer. What I love most about this is its simplicity and ease to drink. So much flavor yet it doesn't overwhelm my palate.

750 mL bottle. Pours mostly clear golden. Smells of gin, some light citrus, and some basement yeast. Tastes of mostly gin. Lime tartness. Juniper and light medicinal notes. Finishes herbal and oaky. Spritzy feel. Pleasant. Quite a strong gin flavor, but zippy enough to not feel sluggish.

750ml bottle, 2020 release, poured into a stemless wine glass.

The beer pours a bright golden amber color, copper hues that's lightly cloudy with a firm finger of white head that has moderate retention and yields a few spots of lacing. The aroma is pleasant, nice funk character, oak, light spirit, honey, soft rustic grains, some earthy hop candy, floral bouquet and a light berry note. The flavors are very nice, really great funk profile, brings out the earthiness of the gin, which is expressed very well flavorwise, berries, light pitted fruits, soft oakiness, delicate floral character with a great backbone of hearty but soft cereal grains. The mouthfeel is great, lively and crisp, coating and smooth with a soft tartness at the finish.

Verdict: A nice barrel aged saison from Sante Adairius. The classic house cultures are there and the funk on this beer is lovely but as it warms, the gin profile really comes to life and offers a more dynamic earthiness to the saison.
