a wood aged wild ale from these guys, and a mighty delicate yet delicious beer. somewhat more hoppy in the nose than expected, with a bright citrus and light tropical fruit profile. some of that obviously comes from the brett, and there is a distinct white wine aromatic here too, but some of it undoubtedly comes from hops, an unexpected feature of this delicious saison type. pale and creamy from the tap, lively and hazy, bubbly and holding its foam really well. i get plenty of oak on it, the tannins from the wood merge in well with the funkiness of the dry brett, which to me tastes fairly mature and fruity too, peaches or something, really subtle but pleasant and well refined. what i like about this beer, and most of the recent beers i have had from sante, is the subtle nature of the yeast, nothing is forced or over the time, its just patient and understood, some of it reminds me of some blackberry farm beers i have had, they do a similar thing and create a similar vibe in their stuff. this one finishes crackling dry with a little bitterness and a mellow oak profile, cleaner than others i have had from them, without a trace really at the end. very easy drinking, very high quality. the hype around their beer continues to be well founded in my experience...
