750ml bottle, 2018 Cellar release, poured into a 12oz white wine glass. Enjoyed on 5.18.19, reviewed from Tasting Journal.
The beer pours a bright ruby red color, garnet and salmon hues with a fair amount of off white head that has modest retention and some soapy lacing. The aroma is excellent, fresh and tart raspberry, rich cherry, light oak barrel that offers a bit of vinous red wine, light lemon zest with some floral qualities that expand as the beer warms while mineral water lingers in the background. The flavors are very good, loads of raspberry and cherry, rich, tart, jammy with light wine barrel that has a prominent oakiness and a touch of vanilla yet lightly floral with some lemon zest, funky house bacteria and finishes with a combination of pale dough and mineral water. The mouthfeel is good, very lively, vibrant with a bubbly carbonated texture, lighter medium body that coats well and finishes with a lightly abrasive bite that is dry and tart.
Verdict: A very nice fruited wild saison from Sante Adairius. Nice expression of raspberry and cherry, good barrel character and a soft pillowy saison base underneath. The balance is there and makes for a very, very good beer.
