Notes: An homage to the lambic and geuze producers of Belgium, we created Time's Assemblage by tasting and selecting one, two, and three-year old wine barrel-aged saisons. We transferred the resulting blend into Venus Spirits' gin barrels, and allowed the beer to further age and develop for another twelve months. Round and floral with a balanced tartness, the enhanced aging begets a synergistic effect where the whole, our assemblage of time, is much greater than the sum of its parts. Sante!

750ml bottle, 2020 release stampd on the side of the label, poured into a stemless wine glass.

The beer pours a bright orange color, golden and amber hues, cloudy and opaque with a thin finger of white head that recedes quickly offering a few spots of soapy lacing. The aroma is lovely, excellent layers of funk and oak, mineral water, pale dough, bright citrus, wildflower, juniper berry, fir tree and peppercorn. The flavors are wonderful, bright and tart citrus, berry fruits, very floral which brings out the juniper and fir tree elements of the gin, the oak is more muted but offers an earthy chewiness to match the hearty pale grains, light spice and delicate funkiness. The mouthfeel is good, coating and lively, a touch on the heavier side and finishes with a soft dry bite.

Verdict: A very good blend of saisons from Sante Adairius. The funk is extremely well developed and is much more delicate and nuanced that what you might expect as their house cultures tend to offer a very consistent and repetitious experience. This is something completely different and very evolved and the addition of the gin barrel is unusual but works very well here and gives the blended saisons something to compliment but also extrapolate from.
