Notes: A project that began 4 years ago, finally finds its final resting place in your hands. West Ashley Cuvée is a blend of four consecutive years of West Ashley (2018, 2019, 2020 & 2021). Each of those years were aged the entire time in Pinot Noir oak barrels with fruit. This is not simply a blend of base beer with apricots at the end, but a true blend of fruit, time and complexity like we’ve never before attempted and may never again. The result is something greater than the sum of its parts, even though those parts are pretty darn great in their own right. We’re beyond excited to unleash this special beer and to hear your response.

This one pours a somewhat hazy golden yellow color, with a small head, and a little bit of lacing.

This smells like very funky apricot, banana, vanilla, oak, and white wine.

There’s a distinct banana ester note that’s not really in the regular West Ashley flavor profile, so that’s interesting. There’s a soft but very funky apricot character, some oak and vanilla, citrus, and tart white wine.

This is light bodied, drinkable, with a manageable acidity.

This is definitely different from the regular West Ashley, and certainly a cool update on a classic American wild ale.

Wow, talk about a disconnect between expectations and experience. The fruit character here is sublime. Rich, deep, layered apricot, jam like but yet refined with a great blend and balance of flesh and skin, the essence of apricot is just sublime here. This is on a remarkably non-funky Sante base, estery, bright, mildly citrusy and focused on a little vanilla and esters. Over the course of an hour, the acidity grows, lending a lactic edge that's Sharper than ideal, obscuring the fruit flavors. Again, the fruit character, while not explosive, is so rich and nuanced that the acidity impeding enjoyment is a little frustrating. For as long as it was in barrels, the low levels of tannins is almost shocking. All told, a delightful beer that i was glad i was able to share with a friend.

Loads of apricot on this. Dried stone fruit on the nose, with a balanced acidity and present funk that lingers with great yeasty esters on the tail. This is awesome.

Beautiful deep orange pour, no clarity, small white head. nose is Apricot rollup, peach skin, apricot juice, Some butter and nail polish remover. taste is barrel, juicy, acetone, dried apricot
