Named after our 660 gallon “oval”, Cask 200 is a celebration of the unexpected and an experiment in variation. Each time we package a portion of its contents, fresh beer is added back to Cask 200 to mix and re-ferment with the aged beer still inside. While this solera-style saison will vary with each bottling, you can expect a delicate malt base supported by funky, yeast-derived flavors and a dry, acidic finish. Sante!

Got a bottle to go at J.Wakefied of all places, beer distro is a mystery. I think batch 13, but I recycled the bottle before realizing I forgot to write that down, whoops. Clear copper bubble body, white sudsy head sits above it all. Big citrus in a wild and zesty way leads the nose with horseblanket funk, mineral accented peach, apple, hay, tannins, and lime, amazing. Taste is more subdued with citrus and funk taking the center stage, milder oak, wild grain, and minerals support, still really well done. Feel is sour and lightly acidic, funk helps dry this out nicely, bright and pale leaning for style. The best SA I have had

A clear orange with a white head that falls off rapidly, this looks solid. The nose is bright and tart with sour green grape, a touch of straw, a little acetone in the back, a light, fruity oak, a little floral character, preserved lemon. An undercurrent of light sherry and a little oxidation, in addition to the acetone, are evidence of the Solera blend. A fruity funk, along with a little fresh pineapple juice, are present.

The palate opens sour with lemon and lactic acid, rather yogurt like, with a nice oak bite. Lime juice, and just a hint of acetone follow. There's a raw stone fruit character, with a touch of almost nutty liquor present. Drying, sour, lactic and lip smacking on the finish, the texture here is quite excellent. Arguably a little too sour. Medium light in body, moderately carbonated, this beer finishes sour and fruity. Compelling, drinkable, enjoyable.

L:Golden deep orange/copper. Moderate head with lacing.
S: Brett, oak, lemon, vanilla.
T: stonefruit notes. Tart, lemon, with a little brett funk. Mineral water, yogurt, apples. As expected, more flavors keep showing up as it warms.
F: fairly full bodied yet dry.
Overall: Very nice. I enjoy the fruity flavors that appear from house bugs doing their thing.

First bottle pour is a beautiful clear yellow orange gold color with lively carbonated bubbles and a dense creamy white foam head. Further pours are hazy. Smells so nice and complex, notes of nutty caramel, toasty white bread, dough, vanilla, touch of clove, peppercorns, red wine, oak barrels, slight sweet vinegar, peach, apricot, cherry, melons, apple, pear, orchard fruits, stone fruits, some tropical and citrus, pineapple, mango, orange, lemon, grapefruit, bubblegum, banana, fruity esters galore, mild barnyardy funk, hay, straw, horse blanket, with floral grassy earthy herbal hops. Tastes a bit sweet and sour, tangy and tart with slight acetic vinegary notes, some barnyard funk, horse blanket, hay, straw, oak barrel, leathery bandaid, orange amber wine, peppercorn spice, hints of clove, almost popcorn, banana, mild bubblegum, apple, pear, melons, pineapple, mango, peach, assorted citrus, cherry, apricot, stone fruits, candied fruit, nutty caramel, toasty white bread, doughy malts, vanilla, super complex, with some floral grassy earthy herbal hops. Feels medium-full bodied, smooth and slick, finishing dry with moderate carbonation. Overall a really great solera-style saison.

This one pours a hazy golden yellow color, with a small head, and lots of lacing.

This smells lemony, with some oak, lime, vanilla, barnyard funk, hay, and citrus.

This is basically exactly what you want for this style. It's softly citrusy and funky, with oak, vanilla, lemon, lime, horse, orange, and stone fruit. I want to drink a lot of this.

This is light bodied, clean, with a soft citrusy mouthfeel, and a great level of drinkability.

This is pretty much spot on for the style. I need this sort of thing all the time.

750 ml bottle into tulip glass; batch 7, bottled in 2016. Pours slightly hazy medium golden yellow color with a 2 finger dense and rocky off white head with fantastic retention, that reduces to a small cap that lingers. Nice dense foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big tart lemon, lime, orange, grapefruit, peach, plum, pear, apricot, pineapple, passion fruit, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, wine barrel, and moderate pale/wheat malt notes; with big strength. Taste of big tart lemon, lime, orange, grapefruit, peach, plum, pear, apricot, pineapple, passion fruit, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate lactic tartness, Brett/wine tang, and yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy lemon, lime, orange, grapefruit, peach, plum, pear, apricot, pineapple, passion fruit, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, white bread, peppercorn, leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Amazing complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, wine barrel, and moderate pale/wheat malt flavors; with an awesome malt/tart/tangy/spiciness balance; with no puckering/astringent flavors after the finish. Fairly crisp/clean finishing. Light-moderate increasing dryness from lingering tart/tangy/spiciness, and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately bready/grainy, and acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol for 6.5%. Overall this is an amazing barrel aged solera wild saison! All around incredible complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, wine barrel, and moderate pale/wheat malt flavors; very smooth and fairly crisp/clean/refreshing to drink with the mellowly acidic/tangy/tannic/drying finish. Amazingly well rounded Brett/Bacteria/Saison complexity; with great oak presence, and pale/wheat malts against acidity. Minimal residual sweetness with crisp dryness. A highly enjoyable offering, and amazing spot on style example. Aged wonderfully.
