the brilliance of this beer, like a lot of the sante wild stuff, is in its subtlety. its a solera type saison, meaning its aged in a big wooden vessel, and each time beer is pulled off to be packaged and consumed, fresh beer is added to keep it all going. i like that system, and i like this beer a lot. its really delicate, sour enough without being exceedingly acidic, but more bretty, funky, farmy, and woody than it is sour, and the acidity only comes on real late in the finish, dry and refreshing and no more. very pale straw colored brew, gentle looking and approachable, with a little soda type fizz from the bottle pour and a very light haze to it, still really radiant in the wine glass. aroma and flavor are identical here, with fresh grasses and clover, new oak, fruity fresh white wine, and a floral beauty that is most evident when i take tiny sips and let them sit on my tongue before swallowing. the yeast is awesome, lambic-esque in its funkiness, not its sourness, but that woody maturity is there, definitely a product of the age of some beer in the blend. lemon zest, iodine, and chardonnay to finish, really pretty little beer here, dry and well carbonated too, drinks way too easy, and is extremely well refined. impressive beer here in its apparent simplicity. loved it.

Batch 7 from a bottle from the brewery from September 2016. Pours a beautiful clear golden color. Smells super funky, but tastes much milder. Nicely tart, but not super sour. A really nice barrel aged saison.
