Wit Beer brewed with chamomile, hibiscus, and blueberries.

Cohen Garcia might be the nation's only 6-month-old with a beer named after him. Cohen's dad, Ryan Garcia, runs the nonprofit State of Kind, which is teaming with Bucktown's Pipeworks Brewing Co. to create Cohen's State of Kind — a beer that will be released in mid-June in honor of Cohen, who has a rare genetic disorder called "22q11.2 deletion syndrome."

A portion of the proceeds from the sale of the beer will go to the Dempster Family Foundation, led by former Cubs pitcher Ryan Dempster, whose daughter Riley also has the rare genetic disorder — caused by the deletion of a small piece of a chromosome. The money will be used to find a cure for the syndrome and boost awareness of it.

Pours murky brown wih deep purple and crimson hues. Lots of haze and A very thin cream colored head.

Smell has some Belgian phenols forward with a very slight sharp aroma and some musty sweet blueberry aromas. Some spices may be in there as well but are to faint to really detect.

Taste follows the smell with some Belgian phenols and spice first to hit the palate. A moderate blueberry sweetness follows with a slight bit of sharpness and alcohol. Slightly dry finish.

Mouthfeel is medium bodied sweet and sticky. Carbonation is very mild and finishes dry.

22 oz. bottle, with Batch #425/428 printed on the label. The latest wit beer creation from Pipeworks, this one brewed with the Dempster Foundation.

Poured into a Duvel tulip glass.

A - Pours an unexpected juicy reddish colored body with about two fingers of pink tinted foam for a head that leaves behind lots of nice spotty lacing on the glass. Not your typical wit beer appearance, that's for sure, but Pipeworks has done this before.

S - The smell is pretty light compared to what I expected. Lots of earthy floral notes, some juicy citrus notes imparted from the blueberries, some creaminess, and mild alcohol fumes.

T - Taste follows the nose - earthy floral notes from the hibiscus and chamomile, paired with the mild but authentic blueberries. It's not bad, but there really isn't much going on here.

M - The feel is crisp and smooth. Medium-full bodied with good carbonation. Lightly sticky & dry on the finish.

Overall, one of the less impressive offerings I've had from these guys lately, but it still hits it's mark. Blueberries aren't the easiest flavor to impart in a beer, and these guys do it pretty well. Recommended for what it is.

Admittedly, I am somewhat biased (SoK is named after my son), but the beer is honestly extremely delicious. PW always makes a great wit and this was no different. The blueberry and hibiscus are the perfect accent and not the least bit overpowering. A great summer beer.
