Zephyrus is a spelt super Saison fermented with a freaked out blend of yeasts and conditioned on our proprietary blend of citrus fruit. We conditioned Zephyrus on blood orange, lime, and grapefruit.

Served on-tap at the pub.
A - Pours slightly hazy golden yellow with a decent one finger tall white head, quickly dissipating down to a light film, leaving small trails of lace on the sides of the glass.
S - Smells of pungent citric hops, fresh tropical fruit pulp, funky saison yeast, black pepper, mild basement must and backing pale malt.
T - Starts off with a mix of funky yeast and tropical fruit pulp slowly being joined by the citric hops, pepper, must and the ever present backing malt. Finish is pretty dry, lingering long after the finish.
M - Light body with moderate carbonation. Fruity, funky feel with a bit of chewy malt backing.
O - A solid hopped up saison. Probably my favorite of the three on right now. Worth a shot if you get the chance.

32oz growler poured into a wine glass
Appearance: Pours a dark golden yellow color with 1+ finger of a white head that dissipates rather quickly to a thin collar. Body is hazy.
Smell: Lots of citrus, lime in particular, and to a lesser extent grapefruit. Other aromas are spicy saison yeast, grain and light malt sweetness.
Taste: Follows the aroma pretty closely with spiciness from the yeast and lime being the most prominent on the palate. Other flavors noticeable are melon, green peppercorns and slight grain in the finish.
Mouthfeel: Light-ish medium body with carbonation on the lower end of medium. Super dry finish.
Overall: Really nice saison. Definitely hope they brew this one again.

Hazy, golden-yellow pour, with a foamy cap of white head...looked like a Tired Hands beer. Aroma was full of citrus and spicy yeast, some bready malt sweetness detectable. Crisp and dry on the palate, loaded with pithy citrus--lime coming out the most--balanced with a big, spicy peppercorn sensation. Light-medium body, drying, moderate carb. Very nice overall.
