Ourison represents the progression and evolution of our Saison fermentation program. Ourison is Our Saison, SaisonHands, left to condition in oak and then allowed to fully express itself via a lengthy bottle conditioning period. The end result is a highly refined snappy and pungent Saison that, I feel, is one of the most simplistic and exciting iterations of Saison that we have ever produced.

Surprised at the 91 BA score. Should easily be higher than that. Buy these, sit on em for a few months in the cellar, and pop em open. They rival HF saisons, too bad they don't cost $10. Seriously killer stuff.

Poured 750ml bottle into my Duvel. It is a clear light yellow with a 2 finger white bubbly head. Retention is excellent and there is scattered lacing on my glass. Aromas of citrus, lemon/lime, and floral notes. Minimal cracker from the pale malts and some grassy/earthy notes followed by hints of spice and funk. The taste is slightly tart, with lemons and limes, sour grape. Floral hops along with oak notes fill in just a touch of cracker and hint of funk on the finish. Light and crisp with fantastic carbonation. Quite easy to drink on a warm summer's eve. A very well made Saison that reminds me a bit of the Hill Farmstead beers I have had in the past.

A - Pale, hazy, cloudy, with a thick, creamy white ring.

S - Lots of twang and barnyard funk with some lingering citrus.

T - Very tart, citrus, barnyard funk, grapefruit, lemon, tart, and tangy.

M - Medium light body with a wet finish.

O - This is a pretty amazing beer.

Really excited to have this one after trying the base beer SaisonHands at the brewery. Pours a mostly clear straw color with a fingers worth of bubbly white foam. The nose is spicy, earthy, and funky. You also get some notes of citrus and oak barrel. The flavor is outstanding! you get a lot of barrel in the taste before a citrus tartness forces a little puckering followed with light pepper and grass. The feel has a bit of a bite to it but the barrel smoothes that out and it finished crisp and dry. Great representation of the style. Very complex flavor but effortless to drink and enjoy!

Refreshing lemon note in front of a very sturdy and complex saison yeast character. Delicate, very bright tart and only slightly funky. World class beer. Enjoyed in Calgary AB.

750 ml green glass bottle, simply capped, and coded "2017 APRIL"
$15 @ Tired Hands General Store, Ardmore, PA

Notes via stream of consciousness: Not much of a pop upon opening the cap, but there's enough carbonation in there. It's a hazy light straw gold in color beneath a short head of bright white. I had to build the head while still trying to not disturb the lees, but that's OK. Unfortunately the head has dropped rather quickly, and only spots of lacing are left behind. It's not a dirty glass though, I used it earlier and get a good head, and then I just rinsed it with hot water. Moving forward, the aroma is quite nice. It's floral and sweetish and funky with rotting apples, peach, wet straw, and oak. I don't know that I'd call it bright, but it's clear and you don't have to work to find it. Ahhh... the flavor follows with even more complexity. It's tart, and slightly white wine-like with some sweetness that balances it. It's softly fruity with apple, peach, pear, and sweetened lemon. Lightly herbal as well (I'm thinking a hint of sage), and moderately mineralish. What it doesn't have that I often find is that heavy yeasty chalkiness and/or yeasty spiciness. It's rather clean and smooth as far as that goes, not that those are bad things, I'm just pointing it out. It's softly floral, slightly musty, dusty/earthy, still a touch lemony, gently oaky, mildly grassy, and very slightly bitter in the finish - ah, is there a hint of chalkiness there as well? Perhaps, but I never said it was a bad thing, just that it's not nearly as obvious as it is in some other saisons. It's completely balanced from start to finish with a bit more pushing against each other at the start between the tartness and the sweetness, and then much less at the end almost as if they just fade into one, or rather, fall on top of one another. It's very delicate in that way, very refined. And that's what makes this beer work, and what makes it great, what elevates it above so many others is that it delivers so much without being heavy handed - it reminds me of the saying, that I can't actually remember, which is something along the lines of the open hand is sometimes stronger than the fist. Light-medium in body and gently crisp in the mouth. Absolutely worth trying.

750 mL bottle. Hazy pale yellow. Big white head. Smells of oak, some sort of European hop profile, kinda grassy, and some lemon. Tastes lemony and grassy, a fairly aggressive hop profile. Chewy oak all the way through, but culminates in the finish. Light body. Something I don't love about this, but I'm in the minority of people who shared this bottle.

Poured from 750 ml bottle dated May 2017.

A: Slightly hazy straw yellow with two finger white head with decent retention and lacing.

S: Nice punch of earthy funk as soon as I popped the top. Charred oak, wet hay, lemon zest, white grapes.

T: Bits of tart citrus with lemon and lime. Grassy notes with fresh hay and oak. Some fruity and floral components. White grapes and faint berries.

M: Light body with average carbonation. Finish is crisp and dry. Very easy drinking and refreshing.

O: Excellent saison. It’s been a while since I’ve visited this style but if I find more like this one, I will be doing it more often.
