Parageusia7 is a Cabernet Franc barrel-fermented Ale that I brewed with malted spelt at Tired Hands Brewing Company. Parageusia7 is thirteen months old.I find Parageusia7 to be very lively and intense; Bone dry with a bright under-ripe stone fruit acidity, damp barrel character, and a refined apricot presence.

500ml bottle, served in a snifter glass. Pours a lighter golden straw yellow body, one finger white head, fair retention and bits of lacing. Compared to the 6th iteration, this overall seems a bit lacking; there isn't as much of that funky cheese presence on the nose or aroma to it. Aroma is mostly a bit of spelt, grain, light lactic acidity, touch of oak, lemon. Flavour follows; again seems to be missing something when compared to Parageusia6. Mouthfeel is lighter bodied, good carbonation and a bit smoother than its predecessor.

Hazy yellow-orange with a faint white film.
I'm getting on nose and palate in relative balance apple, grape, acetic white wine vinegar, oak, and blackberry, finishing very dry.
