Para47 is the very talented future rustic brewer, Christian Zellersfield's, first iteration of the very popular single hop IPA style. After traveling an additional twenty-two years into the future (five hundred and twenty-two years ahead of our time), Christian discovered that the IPA had become, much like in our time, the dominant style brewed on his planet. In an attempt to get ahead of this trend, Christian raced back through time and contacted Jean with his masterfully composed new Parageusia47 recipe. Using exclusively what he deemed to be one of the most beautiful hops of our time, Mosaic, Christian layered bright and juicy (or as he puts it "Sparkly") hop complexity atop layers of wheat and oats. He then fermented this IPA in freshly emptied Vin Santo casks with his proprietary Parageusia microflora for many months. Para47 was then dry hopped, in oak, with even more Mosaic.

500 ml green glass bottle without any production codes or freshness dating

Notes via stream of consciousness: A careful pour from a longstanding refrigerated bottle has delivered a surprisingly hazy golden body beneath a two-finger thick head of white foam. The aroma is mainly of sweetish, grainy, cereal-like malt with a strong floral character. On to the flavor... there's a little tartness to it, not much, but some, and that helps to balance the malt which remains quite strong, and the floral character remains. It's a little bit musty, and slightly honeyish. I can't pinpoint what I'm tasting/smelling but I'm thinking there's some Jasmine in there as it smells a little bit like the soap area in a lot of Asian supermarkets. It's not unpleasant though, at least not yet, let me see if it builds on the palate, but it is unusual. I get some Lily as well. There's some oak to it, not much; and there's a fair amount of bitterness that comes out in the finish, I guess it's not strong enough to stand up to the malt while it's still in your mouth, but it does hit you afterwards. I'm looking for fruitiness but not really getting much more than apple and underlying citrus. There's just a smear of funkiness that I get in the aftertaste, earthy and I hesitate to say sharp - perhaps metallic is more like it - kind of like the green mold in a gorgonzola cheese, but it remains very mild. Some pleasant but light vanilla comes out as well, which I'll assume is from oak. For some reason I thought this was going to be more tart. As it's warming I'm getting a suggestion of "horse blanket", but not much, and some yeasty chalkiness. It's medium bodied and gently effervescent - surprisingly smooth, I thought it would have a little more carbonic bite from a somewhat higher carbonation level. Anyway, looking into the base of the bottle there is a good deal of sediment there, and although the head has dropped by now there's some nice lacing left behind. Let me pour out the rest and see what I get... much more yeasty. It's cloudy now. I should have waited, I know this is going to kill it flavor-wise. Yep, it's quite different. The aroma is the same, mostly, there's less grain and more floral coming through. The flavor is similar, but now I'm finding it more wheaty with a hint of pine, and perhaps some sweet pear and dull berries. Any way you cut it, before or after the yeast pour, it's not that great at all in my opinion. It's kind of blocky, and the dull but firm bitterness doesn't help it as it lingers on the palate.

As I'm not sure if I've got the proper iteration of Parageusia so I'll describe the label so that you can confirm it: white background with a pink watercolor circle around the center design that's done in black, and patches of pinkish-red, sea-faom/teal green, purple, wine-stain, gold, orange, blue, and yellow-green crossing from left to right.

Super funky! The brett is just exploding accross the palate. Getting underlying notes of pineapple, great apple, pine and oak. Short, very dry finish. Super carbonated. Am I tasting salt? First couple of sips were challenging but grows on you.
