On tap at Tired Hands. Served in stemware. Pours a nice, clean yellow color. Fairly clear. Nose has a nice herbal character with a touch of pepper and spice. Faint background notes most reminiscent of a salad with cucumber and mixed greens. That seems to fit fairly well with the descriptions I’ve read of borage. Crisp and easy drinking; it’s hard to tell that this is 7%. Body is light-medium with good carbonation and a very smooth finish. Very nice.

On tap at Tired Hands.
Very similar in appearance to the other saisons on offer this afternoon; light yellow gold with a bit of haze and a good sized cap of slowly settling white foam. Nicely sticky lacing clinging to the glass. Aroma comes first with yeasty esters, peppery spice, and lemony, citrusy hops; a touch of pale malt, and a late emerging floral and herbal character drifting in subtly after.
The flavor follows the nose pretty closely; the prominent characteristics are the house yeast strain, with its spicy, peppery notes; citrusy hops bringing lemon and grapefruit; and the floral, herbal, somewhat vegetal additions coming in late and quite subtly; mostly detected in the finish and aftertaste.
Medium-light body; medium carbonation but smooth in feel. Drinkable but somewhat unexciting; not a standout amongst the vast pantheon of saisons Jean has offered so far, at least not for me. Certainly well-made and tasty but doesn’t rise to the level of the exceptional.

On tap at tired hands. The brew appears a pale yellow color somewhat hazed. Two fingers of white patchy head sits atop composed of large bubbles. Very solid retention that slowly fades leaving some webby strings of lacing effect on the glass.
The smell is spicy with hints of yeasty clove. The yeast aspect is the main character of the aroma with some earthiness. More sniffs reveal some lemon zest that brings out some brightness and contrasts the yeastiness.
The taste is primarily wheat with a faint tart edge. Plenty of earthen flavors mixed with spice like clove. As it warms up, there are some minor floral elements mixed with a bit of pulp and fruity. The aftertaste goes back to earth with some clove spiciness. The alcohol is very well integrated for 7%.

"Borage, (Borago officinalis), also known as a starflower, is an annual herb originating in Syria, but naturalized throughout the Mediterranean region, as well as Asia Minor, Europe, North Africa, and South America. ... Borage production does include use as either a fresh vegetable or a dried herb. As a fresh vegetable, borage, with a cucumber like taste, is often used in salads or as a garnish. The flower, which contains the non-toxic pyrrolizidine alkaloid thesinine, has a sweet honey-like taste..."
Well, now I know, and now you know.
Pale yellow pour, clear, with a small fuzzy white head. A whiff of grassy funk up front, giving way to a more herbal vegetal aroma, which at the time I didn't recognize as borage, because I didn't know what the stuff was. Pretty decent saison qualities in the taste, musty, funky grass, pale malts imparting a tiny sweetness, herbs and a touch of spice, lettuce and cucumberish borage (haha, "is it French?" someone asked) more of an afterthought than a dominant factor, which is good. Crisp and drying, light-medium body, and quite drinkable.

Borage looks real perty, the liquid is bright golden with some yellow sunshine infused within. As always a bright white foam inch of suds up top leaving notches. The smell is very floral with some vegetative smells. I guess it's the cucumber, which pops up with warming. Some spice and pale malts reside as well and a burst of hop aromatics. This is a lot tastier than i imagined it to be. Yeah, there is some vegetative cucumber and the like, but the saison is not lost. Lots of pale malt with some pepper and pear/apple poking at the seems. Grassy aftertate. The 7% is an afterthought, this is a mighty appetizing beer. Feel is light and the carb is just right. I might even go for a second glass next time around.

I can't say that I have ever encountered Borage previously, but it imparts an herbal, garden type of aroma. Some lemon and orange peel pokes through along with under-ripe green melon.
The flavor profile follows the nose. Herbal, non-offensive weed/garden flavors with melon and citrus. A little bit of pepper comes through in the finish.
It hit me after a while that the Borage was giving off a cucumber aroma/flavor. Hence my original garden comparisons.
The 7% is extremely well-hidden. Light body, crisp, dry, and clean. Moderate carbonation.
Another well-crafted, unique, rustic offering from Tired Hands. Borage is an interesting ingredient, providing an added complexity I have never encountered. This is a tasty saison.
